These soft Muffins with Elderflowers were made yesterday afternoon, requiring just 5 minutes for preparation and 20 minutes for baking. The scent of Elderflowers is still noticeable in the kitchen this morning. Soft and fragrant, rich in brown sugar, they are ideal for a family breakfast or a hearty snack.
I made the Muffins with Elderflowers because a few days ago I saw a fellow food blogger, Carlotta, who made a dessert with these white flowers and talked about their aroma and use in cooking.
Consider that they can also be fried with batter, I haven’t tried them yet, but if I do, I’ll let you know. Since I am a fan of muffins, I said to myself; “come on Bea, try these little flowers with a dessert you love and see if you like them!” I would say the answer is a resounding yes, fully approved!

Ingredients for about 16 Muffins with Elderflowers
- 2 Eggs
- 2/3 cup Brown sugar
- 1 1/2 cups All-purpose flour
- 1 packet Baking powder
- 1/3 cup Vegetable oil
- 1/3 cup Water
- to taste Elderflowers (elder flowers)
- 1/4 cup Potato starch
- to taste Powdered sugar

- 1 Mixer
- 1 Oven
- 1 Muffin pan for muffins
- 1 Bowl
- 1 Scale
- 12 Muffin liners
- 1 Spoon
Preparation of Muffins with Elderflowers
Before starting the preparation of the Muffins with Elderflowers, turn on the oven, preheating it to 350°F in static mode.
Now take a bowl, break the two eggs and add the brown sugar, mix everything with the mixer for a few minutes.
Proceed by adding the water and oil, then gradually the flour and potato starch by the spoonful.
Now butter the muffin molds or, as in my case, put the paper liners.
At this point, add the baking powder and the elderflowers to the mixture after having soaked them in a small bowl with cold water and patting them dry.
Pour the mixture into the molds without exceeding halfway, they will rise a lot during baking.
Bake the Muffins with Elderflowers for about 20 minutes, always do the toothpick test before turning off the oven.
You can serve them warm with a few flowers on top or let them cool and sprinkle with powdered sugar.
