Parmesan Chips: Easy and Quick Recipe

How many appetizers do you prepare at home each year? Have you ever tried parmesan chips? I love them, and you? Easy, quick, and perfect for many pairings, the cheese chips go well with many ingredients, from cold cuts to yogurt with ginger, as in my case. Just add some olives, pinzimonio vegetables, or other ingredients you like, and the homemade appetizer is served!

One of the easiest recipes I’ve ever suggested: you’ll only need some grated cheese, from pecorino to grana padano or parmigiano reggiano, and an oven! A recipe that even a child can follow without problems. I invite you to a super appetizer all together, virtually, in my kitchen!

I paired the parmesan chips with a white yogurt sauce with candied ginger cubes from the Fabbri 1905 family, green olives, and cooked ham, as you can see from the photos below or from the video recipe I created for you to explain the few and simple steps necessary to prepare the crunchy and tasty cheese chips! This recipe requires few minutes of preparation, 10 minutes of cooking, and about twenty minutes of cooling before you can serve the fragrant and delicious grated cheese chips.

Ingredients for parmesan chips

  • 7 oz cheese (in my case a parmigiano reggiano)
  • 5.3 oz yogurt (plain)
  • 1.75 oz candied ginger (from Fabbri 1905)
  • to taste chives
  • 6 slices cooked ham (or other cold cuts of your choice but not too salty)
  • to taste green olives (or black olives if you prefer)

Highlighting the importance of not choosing too salty ingredients. For example, I recommend sweet prosciutto instead of cooked ham. Rinse the olives from the brine so they lose excessive saltiness. Any other ingredient you add should be balanced with the fact that the grated cheese chips are salty to taste and have a persistent saltiness.

Tools for preparing parmesan chips

  • 1 Parchment Paper
  • 1 Oven

Obviously, you will need other tools to prepare the yogurt and candied ginger sauce, as can be seen in the video recipe. Depending on the additional ingredients you choose to serve with this appetizer, the tools to use vary, which is why I haven’t included them in the list: the cutting board, knife, bowl, and fork I used for the yogurt and ginger sauce.

Recipe steps for cheese chips

  • Turn on the oven to static mode and preheat to 392°F. While we wait for the correct temperature, prepare the cheese. If you chose to use that piece of parmesan that’s been resting in the fridge for a while, you will need to finely grate it before proceeding.

    Place a sheet of parchment paper on a baking tray. Pour the grated cheese onto the parchment paper, in my case parmesan, but both Roman pecorinos and parmigiano reggiano will work perfectly. Use your hands to spread the cheese, trying to eliminate any clumps caused by grating. We need to achieve a uniform and hole-free base. You can see this step clearly in the video recipe under the first photograph.

    Place the baking tray with the cheese on the upper part of the oven and let it bake for 10 minutes. After this time, remove it from the oven and let it rest on the kitchen counter for about twenty minutes before breaking the cheese slab into pieces with your hands or a knife to create the chips!

    All that’s left is to decide on the remaining ingredients to complete the appetizer or starter for our guests or family. I wish you all bon appétit and look forward to the next recipe!

  • Take a bowl and pour in the plain yogurt. Take some candied ginger cubes and cut them into very small pieces with a knife. Transfer the ginger pieces into the bowl with the yogurt and mix. Take the green olives from the brine and wash them well.

Storage and tips for parmesan chips:

You can store the cheese chips in a plastic container with a lid for a couple of days. Then they will become soggy and no longer super crunchy to the bite as when freshly baked.

You can vary the flavor of the cheese chips by adding paprika, curry, or pepper, which will give the chips the taste of cacio e pepe chips found in stores.
