Do you like black figs? Let’s try together the Recipe for Pastry Filled with Fresh Figs! I’m really lucky, for many fruits and vegetables I can ask my father and his brother Mauro. Both, indeed, since they retired, work the land and then share with the whole family so that we have plenty of fresh seasonal fruits and vegetables.
The Black Figs are very delicate, easy to find during their season. The fig ripens from late June with large fruits called fioroni, then in autumn (second flowering) there are smaller fruits that are much sweeter. You can also make this recipe with green figs when in season.
To make the pastry filled with figs, you won’t need many ingredients, just a few steps and then straight into the oven. We will get a sweet filled puff pastry that we can serve for a snack with fresh figs or breakfast. We could indeed serve this recipe with fresh figs also at the end of the meal as small pastries. They almost look like filled mini pies with fresh fig cream.
I used black figs for this dessert because my father had collected many a few weeks ago and didn’t know how to use them. Having in the fridge the regular puff pastry purchased and never used and bam! Here’s the extra idea that wasn’t there, the puff pastry filled with black figs, lemon, and brown sugar! Ingredients for Pastry Filled with Figs
- 1 roll puff pastry (rectangular, but round is also fine as shown in the video recipe)
- 6 figs (in my case black but green figs are also fine)
- Half lemon (we will use its juice)
- 2 tablespoons brown sugar
- 2 tablespoons milk (for brushing, you can also use egg white or yolk)

- 1 Dough cutter
- 1 Oven
- 1 Small bowl
- 1 Spoon
- 1 Fork
- 1 Parchment paper
- 1 Brush
- 1 Cooling rack
Steps for the Fig-filled Pastry Recipe
Let’s start by taking the roll of puff pastry, either rectangular or round as you can see from the video recipe above the ingredient list. Just cut off the outer parts to make it almost rectangular. Then take the figs, brown sugar, half a lemon, a small bowl with some milk and turn the oven on to static mode at 356°F.
Arrange all the ingredients and the necessary tools for preparing the filled pastry on the work surface. Unroll the pastry on a wooden cutting board, use the cutter or a knife without a blade to cut out 6 rectangles. Three will be the bases of our mini pies and the other three will be used to close the filling. Take the figs and with a knife remove the skin and keep the pulp in a small plate or bowl. With a fork, mash into a purée, then add the juice of half a lemon.
Place the fig purée on the three puff pastry bases, then detach each pastry one by one and place it over the base. Use your fingers to close the edges and seal well with the fork prongs, moving from inside to outside. In the video recipe, this step is shown very well.
Place a sheet of parchment paper on a rectangular baking tray, lay the three filled pastries on top. Use a kitchen brush to brush the top with milk. You can also use a yolk or an egg white if available for this step. Sprinkle with brown sugar and bake for about 15 to 20 minutes. You’ll see that the fig-filled pastry will turn golden and crispy.
Remove from the oven and let the pastries rest on a cooling rack. Allow to cool for a few minutes before serving our dessert or snack with fresh figs.

Storage and Tips for the Snack with Puff Pastry Filled with Fresh Figs
You can store the puff pastry with figs in a dessert container for a couple of days, having made only three it won’t be a problem to make them disappear quickly. If you want to make more fig-filled pastries just double the quantities.
