The Potato Patties are a main course with ground meat and boiled potatoes invented by Little Chef Gianluca together with his Grandma. Why am I talking about them today? Cook with Me comes from the desire to open the doors to my home, my kitchen, to play and experiment with the guests who will follow each week. Every week, for one day, I will have a guest in my kitchen to prepare a Special Recipe!

A simple and quick recipe to make, perfect for children, as you see it was invented by a 12-year-old boy together with his Grandma, who can prepare it with you. Ingredients for Gianluca’s Potato Patties

  • 14 oz potatoes
  • 14 oz mixed ground meat
  • 1 egg yolk
  • 1 pinch salt
  • to taste breadcrumbs
  • 1 pinch pepper
  • to taste chopped parsley (or rosemary)
  • 1 pinch nutmeg
  • 2 tablespoons cheese (grated)

Tools to Prepare the Potato Patties Main Course

Don’t be intimidated by the 40 minutes indicated for cooking time: 20 minutes are necessary to boil the potatoes, and the other 20 minutes are for the oven cooking of the Potato Patties.

Steps for Gianluca’s Potato Patties Recipe

  • As you may have noticed from the video recipe, this preparation is very simple, you can indeed prepare the Potato Patties with your children or grandchildren, being careful during the first phase where you use a knife and peeler. For the rest, let them have fun, get messy and play as my little guest Gianluca did. I found the ground meat scattered everywhere, but seeing him super happy was a real satisfaction.

    Let’s start by bringing a large pot of water to a boil with a good pinch of salt. Then let’s take care of the potatoes. We will wash the potatoes under running water from the sink and then dry them with a towel or some kitchen paper towels. Place them on a cutting board and take the peeler.

    Remove the skin and then use a knife to cut them into small cubes of about 1 or 2 inches. This will greatly reduce the cooking time of the potatoes. Place the potato cubes on a plate. When the water reaches a boil, we will boil the potatoes for about 20 minutes. Before draining, test with a fork; if it penetrates easily without much force, they’re ready.

    Transfer them to a bowl with high sides and mash them well with a fork. From here on, you can involve the children in the preparation. There are no more knife or other dangers. Indeed, Gianluca mashed the potatoes into puree, added the ground meat, and proceeded with preparing his own invention of Potato Patties.

  • Continue the preparation after letting the potatoes cool for a few minutes. Add the ground meat, egg yolk, and a pinch of salt. Mix quickly, as Gianluca says: “the potatoes should no longer be visible because they must be well mixed with the meat!”.

    Preheat the oven to 350, maximum 375 degrees Fahrenheit. In a small plate, pour some breadcrumbs, in my case nice and coarse from Grandma Sandrina, the official supplier of breadcrumbs and grated cheese for our family. We will use it for the crispy coating of today’s potato patties. We won’t add any other ingredients to our version because we fully respected Gianluca’s Recipe.

    As indicated, however, in the list of optional ingredients you will find: grated cheese, pepper, nutmeg, finely chopped parsley, or other ingredients you prefer. Remember that they should all be added at the bowl mixing stage of the ground meat with the boiled potatoes so that they incorporate better into the mixture. As my personal suggestion, I can tell you that I would have added pepper and nutmeg, and also cheese. For the herbs, I would have chosen dried and already chopped rosemary. Let us know in the comments if you try any of these variations.

    After having worked all the ingredients in the bowl, we are ready to create the potato and meat patties. Place a sheet of parchment paper on a baking tray in front of us. With hands, take small portions of the mixture, about 3 to 4 ounces per potato patty. Gianluca’s are the largest; children don’t yet have experience in weighing by eye. Let them do it, they are surely having fun and will be proud of their preparation.

    Roll each potato patty in the plate with breadcrumbs without adding anything else, so no egg, flour, or additional ingredient. Then place the patties, as you coat them in breadcrumbs, directly on the tray. We made 8 potato patties, 3 large and the other 5 smaller.

    Bake them for about 20 minutes at 350 degrees. Turn the potato patties during the cooking time after about 10 minutes. This will prevent them from getting dark on only one side. We recommend serving the boiled potato and ground meat patties hot, possibly with ketchup or mayonnaise or other sauces your children and grandchildren like. As Gianluca suggests, a good side of french fries wouldn’t be bad. In the coming months, however, we will prepare together the side dish he has devised for this recipe. So subscribe not to miss it! You will have to wait until August, though, when he will be back on vacation with Mom Daniela.

Storage and Variations of Gianluca’s Potato Patties Recipe

As anticipated, the possible variations to Gianluca’s potato patties recipe are many, all to be experimented with since Gianluca’s version is very simple. Let us know which of the various ingredient suggestions you will incorporate into this recipe!

For storage, we can tell you to let the potato patties cool completely, then place them in a plastic container with a lid and store them in the refrigerator if you plan to consume them within a couple of days. Otherwise, you can freeze them in freezer bags, taking care to separate them with small pieces of parchment paper inserted between each one to prevent them from sticking to each other and making them easier to separate later.
