Ingredients for Potatoes with Yogurt Sauce

  • 14 oz potatoes
  • 1 tsp mustard
  • 1 tsp lemon juice
  • 3/8 cup plain yogurt
  • 1 tsp extra virgin olive oil
  • to taste chives
  • to taste salt
  • to taste pepper

Preparation of Potatoes with Yogurt Sauce and Chives

  • First, wash the potatoes, peel them, and cut them into slices not too thin. We will steam the potatoes for a maximum of 20 minutes. They should stay intact and not break apart. Let them cool completely. Then add the teaspoon of extra virgin olive oil.

  • Meanwhile, let’s prepare the yogurt sauce. In a bowl, pour the yogurt, add the teaspoon of mustard, lemon juice, a pinch of salt, and a pinch of pepper. If it remains too thick, you can add a teaspoon of extra virgin olive oil and a bit of water.

    For the chives, you can choose fresh ones and cut them into small pieces or use dried ones. It’s up to you.

    Mix the sauce well with the help of a fork until it’s nice and creamy.

  • Now pour the yogurt sauce into the bowl where the potatoes were resting and mix carefully, you don’t want to break the slices.

    Place the potatoes with yogurt sauce and chives in the refrigerator for at least an hour before serving them at the table.

Storage:

You can store the potatoes in the refrigerator for a few days. It’s important to cover them well, ideally in a bowl with a lid to prevent air from getting in.
