Puff Pastry and Sausage Candies are very simple to make and with just a few steps, you’ll have small finger foods ideal for an aperitif or a tasty and inviting appetizer. I saw this recipe in a Facebook group I frequent where the filling was with ground meat and peas because these candies can be stuffed to your liking. In that case, meatballs with peas left over from the previous dinner were reused. So we can say they are a great fridge-clearer to make an ingredient that would otherwise be wasted much more inviting.

Ingredients for 9 Puff Pastry and Sausage Candies:
- 1 package Puff Pastry (rectangular)
- 1 Egg Yolk
- 1 Sausage
- 2 tablespoons Ricotta Cheese
- 1 Carrot
- 1/2 Onion (or shallot)
- 1 pinch Salt
- 1 pinch Black Pepper
- to taste Poppy Seeds
- to taste Sage
- to taste Parsley
- to taste Rosemary
- to taste Extra Virgin Olive Oil

Preparation of 9 Puff Pastry and Sausage Candies:
To prepare the Puff Pastry and Sausage Candies, we need to make a small sauté with the chopped half onion or shallot in a pan with a drizzle of extra virgin olive oil.
Peel the carrot and cut it into strips not too long. Then add it to the pan and sprinkle with salt, pepper, rosemary, sage, and parsley or other herbs to your liking. Also crumble the sausage and brown it with the sauté for about 5 minutes.
Turn on the oven and bring it to a temperature of 356°F with static mode.
Turn off the heat and pour the sauté into a bowl. At this point, add the two tablespoons of ricotta cheese and mix everything together.
Finally, take the puff pastry, unroll it on a work surface, and cut out 9 rectangles.
Place a spoonful of mixture in the center of each rectangle and roll it up as if you were making a croissant: from one point to the other. The two ends that have been created at this point should be rolled in opposite directions to create the candy effect.
Break the egg and keep only the yolk, which we will use to brush the surface of our puff pastry candies.
Sprinkle them with the seeds you have at your disposal and finally bake. Cooking the puff pastry and sausage candies takes from 15 to 20 minutes maximum. It depends on the oven. They should be nicely golden like the ones you see in the photo.
All you have to do is prepare a tray, some other snacks, or as in my case, serve them with olives and a nice glass of wine.

Storage:
You can store the Puff Pastry and Sausage Candies for up to two days in a sweet box or airtight container as both the pastry and filling are well-cooked. If you wish, you can also freeze them and keep them for up to a month in the freezer. Before serving, they need to be defrosted in the refrigerator, so if you plan to serve them for lunch, take them out of the freezer the night before; if you’re serving them for dinner, just remember in the morning.
