The original idea was of puff pastry bundles filled with provolone and cooked ham. Often during this period, it happens that not all the necessary ingredients are on hand, so I thought of making them smaller and filling them with smoked scamorza and cooked ham.

Ingredients for Puff Pastry Pockets with Scamorza and Ham:
- 1 roll puff pastry
- 1 slice Cooked Ham (wide and a bit thick)
- as needed smoked scamorza
- 1 Egg
- as needed Poppy seeds

Preparation of Puff Pastry Pockets with Scamorza and Ham
The first thing to do is to turn on the oven and set it to 356°F on static mode because these Puff Pastry Pockets prepare quickly.
Now, let’s open the roll of puff pastry and spread it on a work surface. With the help of a glass, form our circles.
You should get about 20, so don’t choose a glass that’s too large.
Now, wrap small pieces of smoked scamorza with the cooked ham. You will then have small rolls to place in the center of the discs.
Obviously, you don’t need to place them on all the discs because one will be the base of our pocket and the other disc will go on top so that we can close them easily.
Then, apply slight pressure on the edges to make the two dough discs adhere to each other.
Now place the obtained pockets on a baking sheet and brush the surface with the egg using a kitchen brush.
Finally, before baking, sprinkle with the seeds you’ve chosen, in my case, poppy seeds.
Bake the pockets, cooking varies from 10 to a maximum of 15 minutes. Check them occasionally while they are in the oven, when they are nicely golden outside, it will be time to turn off the oven. Be careful not to burn them on the bottom in contact with the baking sheet.
Serve the Puff Pastry Pockets with Scamorza and Ham hot or let them cool.
You can accompany them with a nice bottle of bubbly with an excellent Passerina Spumante Brut Charmat Method from Terra Fageto as I did.
Storage:
The Puff Pastry Pockets with Scamorza and Ham can be stored at room temperature, in a pastry holder, for a whole day. They prepare very easily and especially quickly, so there’s no need to prepare them days and days in advance; they would become too hard to enjoy them as they deserve.
