Ingredients for a Ring Cake with Orange Juice
- 2 Eggs
- 7/8 cup orange juice (up to 1 cup)
- 2 1/2 cups all-purpose flour
- 1/3 cup potato starch
- 1 cup sugar
- 1/2 cup vegetable oil
- 1 packet baking powder
- 3/4 cup sliced almonds
- to taste powdered sugar

Preparation of the Ring Cake with Orange Juice and Almonds
First step? Turn on the oven to static mode and preheat it to 350°F. This cake has few steps and is very quick to make, so the oven needs to be at temperature when we bake it. To prepare our beautiful and delicious Ring Cake with Orange Juice and Almonds, we start by juicing the oranges. In my case, I made sure to pick deep red oranges, I believe they are more fragrant and less bitter. Of course, you don’t have to grill your greengrocer, it’s a matter of taste ^_^ Once you have at least 7/8 cup of orange juice, proceed to blend all the liquid ingredients well with a whisk. So in a high-sided bowl, since the orange juice is very liquid and could mess up your kitchen, we will break the two eggs, pour in the vegetable oil, and add the orange juice. With the help of a spoon, we will add the sugar, the pre-sifted cake flour, potato starch, and also add 1/3 cup of sliced almonds, and finally the packet of baking powder. Take the ring cake mold, you can either butter it and dust with flour, or, as in my case, grease it with vegetable oil.
Pour our mixture into the mold and scatter the remaining sliced almonds on top. Bake our Ring Cake with Orange Juice and Almonds for about 35-40 minutes in a static oven at 350°F. Before removing the cake from the oven, always do the toothpick test; if it comes out dry, our cake is ready, otherwise continue baking in 5-minute increments. When our cake is well cooled, we can dust it with powdered sugar and serve it to our guests. Of course, I always have guests and also colleagues at the office, they are all greedy and ravenous.
