Ingredients for Savory Grilled Tomatoes Side Dish

  • 6 San Marzano Tomatoes
  • Extra Virgin Olive Oil
  • 1 pinch Salt
  • 1 pinch Black Pepper
  • Parsley (chopped)
  • 1 clove Garlic

Preparation of Grilled Tomatoes

  • First, cut the San Marzano tomatoes in half lengthwise and turn on the grill; in my case, it’s a simple home electric grill, I add a bit of water at the bottom, and off we go. Finely chop the parsley, cut a couple of garlic cloves into small pieces, use some for cooking and others raw if you like their flavor. Chop the marjoram and take the oregano leaves. Place the tomatoes on the grill, sprinkle them with parsley, oregano, marjoram, and some pieces of garlic here and there. Cook until the tomatoes become nice and soft.

  • Once ready, plate them and add extra virgin olive oil, a sprinkle of salt, in my case, I used smoked salt from Gemma di Mare, and if you like, some raw garlic pieces with a few parsley leaves. This savory grilled tomato side dish is something I prepare often; it pairs well with any dish, from roasted meat to simple pan-fried meat, as well as roasted fish or pan-fried fish. In short, try it, and you’ll see. Oh, I almost forgot, it’s also a great side dish for vegetarians: there are no ingredients other than those from our home garden or our farmer friend.
