The Savory Mini Plumcakes with Olives recipe came to mind while I was exercising because, even while doing crunches, I think of things I could try to make. So after dinner, I got to work. With a video published on the Fan Page and on my personal profile because it was a test and I wanted to document the steps followed.
Now the recipe is very simple, although it’s rich in ingredients, the result is satisfying for me as I devoured them at lunch. I hope you like them too and let me know.
Honestly, I imagined these Mini Plumcakes served during a dinner as an appetizer, instead of the usual crostini or the vol-au-vent that are now seen and seen again.
Obviously, you can replace the olives with other ingredients you have available in the fridge or pantry. I tried them with olives because I like them a lot and I always have a jar open in the fridge.

Ingredients for Three Savory Mini Plumcakes with Olives
- 1.76 oz buckwheat flour
- 5.29 oz all-purpose flour
- 2 eggs
- 1/2 tsp salt
- 1/2 tsp extra virgin olive oil
- 1 jar plain yogurt (in my case the strained Kefir)
- 1 packet baking powder
- as needed green olives
- as needed black olives
- as needed poppy seeds (or other seeds)
- as needed seed oil (to grease the molds)

Preparation of Savory Mini Plumcakes with Olives:
The first thing to do is to turn on the oven in static mode and set it to 356°F.
Then break two eggs into a bowl, add a pinch of salt and mix everything with the electric whisk.
Add the jar of plain yogurt, in my case I added the strained Kefir that I’m producing at home. If you want to achieve a similar taste, you can use Skyr or look for packaged Kefir at the supermarket.
Then we can add the two flours with the help of a spoon, buckwheat flour and all-purpose flour. I sifted them together in a small bowl and also added the packet of baking powder.
Add gradually by spoonfuls so that the dough can absorb them well and not form lumps.
Pour a teaspoon of extra virgin olive oil into the bowl and work with the whisk for a few seconds until the oil is completely absorbed.
Grease the mini plumcake molds well with your fingers and pour in 2/3 of our mixture.
Place the green and black olives on top and sprinkle with poppy seeds or any seeds you have available.
Bake for about 25 – 30 minutes, always do the toothpick test before turning off the oven. Mine were already well cooked around 25 minutes; I left them in for a few more seconds for a crispy crust on top, as I like it. You can serve them hot or let them cool in the molds.

Variations:
As I mentioned in the premise, you can vary the decoration, whether with green and black olives or not, you can add cherry tomatoes, or mushrooms, maybe with some sausage sautéed in a pan. Or with zucchini and scamorza cheese (in fact, I might try these too). Let your imagination run wild, you can also use this recipe as a way to clean out the fridge of those ingredients that are open but not enough for a full meal.
