Savory Pan Peas

Savory Pan Peas are a simple and tasty side dish, ideal with any main course. It’s a side dish that we can prepare all year round because if they are in season, they are easily found at the greengrocer or supermarket; if not, we find them in convenient glass jars or cans.

Ingredients for Savory Pan Peas for two people

  • 1 package Green Peas (canned or in glass)
  • 1.4 oz leek (or onion)
  • to taste Extra virgin olive oil
  • to taste Marjoram
  • to taste Chili pepper (powdered)
  • 1 1/2 cup White wine
  • 1 pinch Salt
  • 1 pinch Peppercorns
  • 1 pinch Black pepper (ground)
  • 1.1 oz Speck (cut into strips)

Preparation of Savory Pan Peas

As I mentioned before, the recipe is very simple, requiring only a few steps and especially very few ingredients, which are mostly aromas. Note the few steps to obtain these tasty Savory Pan Peas.

  • First, let’s fry the leek sliced into rounds or the chopped onion with some extra virgin olive oil. When the leek or onion begins to brown, we will add the speck strips and let them brown well.

    In the meantime, let’s drain the brine from the peas and rinse them under cold running water in the sink.

    We can now add the peas to the pan. Now that the peas are in the pan, let’s continue by sprinkling everything with a pinch of salt and ground black pepper.

  • Let it cook over medium-high heat with the lid on for about 5 minutes. After this time, we can deglaze with half a cup of white wine and let it cook for at least another 10 minutes.

    Finally, add the black peppercorns; not too many are needed, just to accentuate the smell. Put some marjoram leaves in the pan if you have them fresh, or even dried marjoram is fine.

    The chili pepper is your choice; I like it, so I add it at the end, a light sprinkle to give even more character to this side dish.

Storage:

You can store the peas in the refrigerator when they are completely cold or you can close them in a freezer container and keep them for a month.
