Strawberry Grape Cake

This morning I present to you the recipe to prepare a soft and super fragrant Strawberry Grape Cake with extra virgin olive oil. The combination of “the Director bringing strawberry grapes to the office at 9.00 in the morning” and “how can we eat all these strawberry grapes?” = Cake!

So I open various sites, read many variants and decide: Strawberry Grape Cake with extra virgin olive oil, I can’t regret it, so if you come across strawberry grapes take advantage of it! Also called Bertolina Cake, typical of the city of Crema, this strawberry grape cake is super fragrant, soft and delicious, bite after bite!

Needless to say that the smell in the kitchen was fantastic, a cake so soft it seems like a cloud, if you then store it well closed in a cake container it will remain soft for days and days.

Ingredients for a 10-inch mold:

  • 2 1/2 cups all-purpose flour (Molino Chiavazza)
  • 1 lbs strawberry grapes
  • 4 1/4 oz brown sugar
  • 1 egg
  • 8 tablespoons extra virgin olive oil
  • 7 oz milk
  • 1 pinch salt
  • as needed powdered sugar
  • 1 packet baking powder

  • 1 Mold bundt pan

  • 1 Scale

Preparation of the Strawberry Grape Cake:

  • As you can imagine, we start by preheating the oven to 356°F in static mode and then move on to the steps of our recipe. Wash the strawberry grapes thoroughly and dry them well with a cloth. In a high-edged bowl, work with the help of beaters the egg with 2.8 oz of brown sugar, a pinch of salt, and gradually add the tablespoons of extra virgin olive oil. Then, incorporate the flour and the baking powder, pour in the milk gradually, and work the ingredients until you get a smooth, lump-free batter.

    Add a few strawberry grapes and work them into the batter with a spoon. At this point, take the 9.5-inch cake pan and line the bottom with parchment paper, you can also make a bundt cake, I have tried both versions and the result is always optimal. Once the entire batter is poured into the pan, place the remaining grapes on top, pressing lightly so that the entire surface is well covered. Sprinkle with the remaining brown sugar and bake for about 40 to 45 minutes.

  • The recipe stated 30 minutes, in my oven 30 minutes wasn’t even enough to color the surface of the cake. So I let the cake bake for 40 minutes.

    Always make sure to do the toothpick test before taking the cake out of the oven. To serve, you can wait until it is completely cool to sprinkle with powdered sugar, or enjoy it warm.

    After the first day, if you haven’t finished it like in my case, you should store it in the fridge as the strawberry grapes might ferment. Obviously, wait for it to return to room temperature before serving again, or if you have a microwave oven, you can warm it slightly.
