This recipe for Wine and Anise Cookies was passed to me by Cinzia, the wife of my cousin Andrea. These cookies are easy to make and require few ingredients, leaving a hint of anise, which will drive anyone who likes it crazy. I think they are also ideal for winter evenings, with friends by the fireplace and a glass of white wine to accompany them. Many thanks to Cinzia, and I invite you to try them!
I know that in Rome these cookies are called “Le Ubriachelle” I found out today thanks to a follower who pointed it out, and I thank them for this. Do you know if they have other names? Around here, they’re also called wine rings, but this name is also used for other leavened preparations of real doughnuts with wine among the ingredients for their preparation.

Ingredients for approximately 40 wine and anise cookies
- 4 cups Flour
- 1/3 cup Vegetable Oil
- 3/4 cup Sugar
- 1/2 cup White Wine
- 1/2 tablespoon Anise Seeds
- 1 tablespoon Liquor (Anisette, Meletti, or Varnelli)
- 2 teaspoons Baking Powder
- 1 pinch Salt
- to taste Sugar

Preparation of Wine and Anise Cookies
To prepare the wine and anise cookies, start by preheating the oven to 350°F in static mode. Soak the half tablespoon of anise seeds in the white wine so they soften well. Then, take a wooden work surface and pour the sifted flour, salt, and baking powder, then add the 3/4 cup of sugar.
Make a well in the center and add the vegetable oil and the white wine where the anise seeds were left to soften, then the tablespoon of anisette, and mix everything until you obtain a compact and homogeneous dough.
Now, have fun forming many small strips of dough, which you will then close into rings. Take a baking sheet, line it with parchment paper, place your cookies on top, and sprinkle them with the granulated sugar that you set aside. Bake at 350°F for about 20 minutes.
