Air-fried Diced Pumpkin

The air-fried diced pumpkin is a clever recipe to achieve a light, healthy, and tasty autumn side dish in just a few minutes, easy, fast, and very appetizing for those who want to avoid real pan-frying with lots of oil and fats.

Pumpkin is a versatile vegetable that lends itself well to being air-fried because, with very little spray oil, you can achieve delicious pumpkin cubes, crispy outside and soft inside.

You could accompany these fried pumpkin cubes with some warm and fragrant bread, also cooked in just a few minutes in the air fryer.

Economical, vegan, vegetarian recipe, gluten-free, ideal for those on a diet, or simply wanting to eat healthily.

Note that the temperature and cooking times are generally indicative because it greatly depends on your type of air fryer, however, all the recipes on my Blog are thoroughly and meticulously tested by me, so more than well-tested. Nonetheless, I recommend checking the cooking occasionally to better adjust the time and temperature to your specific air fryer.

Ingredients

  • 1.1 lbs Neapolitan pumpkin (or Delica)
  • 1 tsp spicy paprika
  • to taste extra virgin olive oil (I use extra virgin spray oil, cold pressed)
  • sprigs rosemary
  • to taste fine salt
  • to taste garlic powder (optional)

  • Air fryer paper trays without holes, very thin and free of BPA and other toxic substances

Steps for Air-Fried Diced Pumpkin

Start the preparation by washing the pumpkin well, peeling it (remove all seeds), and cutting it into large cubes (NOT thin). Transfer the pumpkin cubes into a bowl and season with salt, spicy paprika, oil (I use my extra virgin olive oil spray, cold-pressed, it’s quality oil, and a little goes a long way), garlic powder (optional), and rosemary, mix very well, cover the bowl and let it all season for 5 minutes.

  • Pour the pumpkin cubes into the air fryer basket, lined with perforated parchment paper.

  • Set the air fryer temperature to 356°F and program the cooking for about 20 minutes. At the end of cooking, adjust the salt and transfer the pumpkin cubes to a serving dish, garnish with rosemary sprigs, and serve hot.
