Air Fried Pumpkin

The air fried pumpkin cubes, is a clever recipe to obtain in a few minutes a light, healthy, and tasty side dish, easy, quick, and very appetizing, for those who want to avoid real frying in a pan, with a lot of oil and fats.

Pumpkin is a versatile vegetable, which lends itself well to being fried in the air fryer because with very little spray oil, you get delicious pumpkin cubes, crispy outside, and soft inside.

Economical, vegan, vegetarian, gluten-free side dish, ideal for those who are on a diet, or simply want to eat healthily.

You could accompany these fried pumpkin cubes with warm and fragrant bread, always cooked, in just a few minutes, in the air fryer.

Please note that the temperature and cooking times are average and indicative, because much depends on your type of air fryer, however, the recipes on my Blog are all previously and rigorously tested by me, so more than tested, in any case, I recommend checking the cooking frequently, to best adapt the time and temperature to your air fryer.

Ingredients

  • 17.6 oz Neapolitan pumpkin (or Delica)
  • 1 teaspoon hot paprika
  • as needed extra virgin olive oil (I use extra virgin spray oil, cold pressed)
  • twigs rosemary
  • as needed fine salt
  • as needed garlic powder (optional)

Tools

  • Cutting board with two side trays for scraps
  • Air fryer Cosori, capacious (5.7l) uniform cooking
  • Air fryer parchment paper non-stick, with holes
  • Air fryer paper trays without holes, very thin

Steps for Air Fried Pumpkin Cubes

Start the preparation by washing the pumpkin well, peeling it (removing all the seeds), and cutting it into thick cubes (NOT thin).

Transfer the pumpkin cubes into a bowl and season them with salt, hot paprika, oil (I use my cold-pressed extra virgin olive oil spray, it is of quality and little is needed) garlic powder (optional) and rosemary, mix very well, cover the bowl and let it marinate for 5 minutes.

  • Pour the pumpkin cubes into the air fryer basket, lined with perforated parchment paper.

  • Set the air fryer temperature to 356°F (180°C) and program the cooking for about 20 minutes.

    At the end of cooking, adjust the salt and transfer the pumpkin cubes to a serving plate, garnish with rosemary twigs, and serve hot.
