Air Fryer Candied Almonds
Homemade candied almonds with the air fryer, like those you buy at country fairs or city market stalls, a practical and quick way to get a delicious comfort food in no time, they are irresistible, you can’t stop at just one.
A very easy recipe with only 3 ingredients.
When I first saw these air fryer candied almonds online, I was a bit skeptical, so I decided to do an initial experiment with half the quantity and I was won over, they turn out perfect, they were gone in a flash, and I had to make them again due to high demand, so the recipe is super tried and tested.
Usually, these candies are eaten during the Christmas season or during the Day of the Dead, instead of nougat, but they are so good that they can be made all year round.
They are also excellent as a protein snack or as a tasty afternoon snack or as a small treat to enjoy at the end of a festive dinner, while waiting for the actual dessert.
The candied almonds, packaged in appropriate food bags, can also serve as a small tasty DIY Christmas gift.
With this recipe, you can use the nuts you prefer, such as peanuts, cashews, hazelnuts, pecans, walnuts.

Ingredients for Air Fryer Candied Almonds
- 5.3 oz almonds (whole shelled with the brown skin, or other type of nuts)
- 0.4 cup granulated sugar
- 0.3 cup water
- 0.6 tsp vanilla extract (optional)
Tools for Air Fryer Candied Almonds

Steps for Air Fryer Candied Almonds
Take an aluminum tray and cover it with parchment paper (or use the special paper trays for air fryer, see notes below) add the whole almonds (or chosen nuts) with the skin on, this will allow the sugar to adhere better (so do not peel them) finally pour in the sugar, water, and vanilla extract (optional).
The almonds should be placed in a wide container in a single layer, not overlapping, mix everything well to ensure that all the almonds are well coated with the sugar and water mixture.
If you have time, before using them, slightly toast the almonds in the hot oven (5/6 minutes) or in a pan over low heat, you will have even crunchier candied almonds.
Place the container in the air fryer and set the temperature to 356°F for about 20 minutes, stirring a couple of times.
Let the candied almonds cool and then break them apart with your hands (those that have remained stuck together).
Notes and Tips
You can store the candied almonds for about a week, preferably in an airtight container or in food-safe plastic bags.
Shopping Tips!!!
I highly recommend the Philips Air Fryer, with its large basket, and the Rapid Air technology that creates optimal hot air circulation to cook food evenly, keeping it crispy on the outside and tender on the inside. With multiple cooking functions in one: Fry, bake, grill, roast, and reheat.
A healthier way to cook because it separates and captures excess fat (healthy and tasty dishes with up to 90% less fat). It cooks up to 50% faster and saves up to 70% energy compared to an oven (cuts cooking time in half compared to a conventional oven as it does not require preheating). Very useful is the “Keep Warm” mode. Finally, all individual components are easily removable and dishwasher safe. Highly recommended! You can find it on Amazon at a special price.
These Disposable non-perforated baking paper for Air Fryer are very useful, do not dirty the fryer, yet the hot air circulates just the same because they are very thin. They are also oil and water resistant, non-stick, do not burn, and can be used in a conventional oven.
I often use this convenient perforated parchment paper for the air fryer, non-stick and easy to clean, which can also be used in a conventional oven.

FAQ (Questions and Answers)
What are “addormenta suocere” almonds?
Candied almonds are also called “mother-in-law sleepers“ because medieval legend has it that this was the sweet that “saved” boyfriends from the gossip of mothers-in-law, as older people could not bite into this crunchy treat and so they let the sugar dissolve slowly in their mouths.
This prevented mothers-in-law from using their long tongues: to enjoy the almonds, they necessarily had to remain silent for a long time, an activity that led the women to fall asleep, thus saving the boyfriends! What are the health benefits of almonds?
Almonds are considered a kind of “superfood“: for our ancestors, these fruits were a remedy for hangovers and, above all, a powerful aphrodisiac, today they are considered a real boon, being rich in beneficial properties for our bodies. In particular, they are an excellent source of plant-based proteins.
