Very easy recipe, with only 3 ingredients.

When I saw these air fryer caramelized almonds online, I must admit I was a bit skeptical. I decided to do an initial experiment with half the amount and I was proven wrong; they come out perfectly, they disappeared in a flash, and I had to make them again right away due to popular demand, so this recipe is well-tested.

Usually, these pralines are eaten during the Christmas period or on All Souls’ Day instead of nougat, but they are so good that they’re made all year round.

They are also great as a protein snack or a tasty afternoon treat, or as a small sweet treat to enjoy at the end of a festive dinner while waiting for the main dessert.
Packaged in suitable food bags, caramelized almonds can also serve as a small tasty DIY Christmas gift.

With this recipe, you can use any nuts you like, such as peanuts, cashews, hazelnuts, pecans, walnuts.

  • 5.3 oz almonds (whole with brown skin, or other types of nuts)
  • 0.4 cup granulated sugar
  • 0.3 cup water
  • 0.6 tsp vanilla extract (optional)

Steps for Air Fryer Caramelized Almonds

Take an aluminum tray and line it with parchment paper (or use the special air fryer paper trays, see notes below) add the whole almonds (or chosen nuts) with the skin on, this will allow the sugar to adhere better (so do not peel them) and finally pour in the sugar, water, and vanilla extract (optional).
The almonds should be placed in a wide dish in a single layer, not overlapping; mix everything well to ensure that all almonds are well covered by the sugar and water mixture.

  • If you have time, lightly toast the almonds in a hot oven (5/6 minutes) or in a pan over low heat before using them; you will have even crunchier caramelized almonds.

  • Place the container in the air fryer and set the temperature to 356°F for about 20 minutes, stirring them a couple of times.

  • Allow the caramelized almonds to cool and then break apart with your hands (those that have stuck together).

Notes and Tips

You can store the caramelized almonds for about a week, preferably in an airtight container or in food-grade plastic bags.
