Air Fryer Sandy Zucchini
If you’re in a hurry and want a tasty, light, and quick side dish, this recipe, with the help of the air fryer, is for you. In just a few minutes, you’ll get delicious, crunchy, and light zucchini using very little oil. A healthy, simple, and very easy recipe to prepare.
Please note that the cooking temperature and times are generally indicative because a lot depends on your type of air fryer; however, the recipes on my Blog are all previously and rigorously tested by me, so more than tried and true. Anyway, I recommend you check the cooking occasionally to best adapt the time and temperature to your fryer.

Ingredients for Air Fryer Sandy Zucchini
- 14 oz zucchini
- 1 tablespoon extra virgin olive oil
- 2 teaspoons paprika (sweet)
- to taste breadcrumbs
- to taste fine salt
- to taste extra virgin olive oil (spray, to gratin the surface)
- to taste garlic powder (additive-free, vegan, optional)
- to taste black pepper (optional)

Steps for Air Fryer Sandy Zucchini
Wash the zucchini well and cut them into sticks lengthwise. Take a bowl and season with a tablespoon of extra virgin olive oil, salt, garlic powder (optional), sweet paprika, and finally 2 tablespoons of breadcrumbs, mix well, let it marinate for 5 minutes.
Pour the seasoned zucchini sticks into the air fryer basket, covered with perforated parchment paper, spray a little extra virgin olive oil on the surface to better gratin the zucchini. My extra virgin spray oil with dispenser, is also cold-pressed, so excellent and of quality (see Notes below). Try to arrange the zucchini in the basket, so they do not overlap.
Set the air fryer temperature to 320°F and program the cooking for about 20 minutes. At the end of cooking, adjust the salt, transfer the zucchini sticks to a serving plate, and serve them hot and crispy.

Notes and Tips
If you’re not in a hurry and want to make your zucchini even crispier, after cutting them into sticks, season with fine salt and let them rest for about 30 minutes to remove the water, then proceed as per the recipe.
