Creamy Lemon Sorbet

Under the scorching sun, there’s nothing better than enjoying this creamy and super refreshing lemon sorbet, always ready in the freezer for a light and airy snack or to serve at the end of a meal, on special occasions or holidays, as a delicious digestif (even in winter).
Very easy to prepare, no ice cream maker needed.

Ingredients for the Creamy Lemon Sorbet

  • 1 3/4 cups Water
  • 7 3/4 oz Sugar
  • 4 Lemons
  • 2/3 cup Lemon juice (about 4-5 lemons, preferably organic)
  • 1 egg white
  • 1 Lemon zest (about 1 tbsp)
  • 1 1/3 tbsp Limoncello (optional)
  • to taste cookies (like ladyfingers for garnish, optional)

Preparation of the Creamy Lemon Sorbet

  • Wash the lemons well, grate the zest of 1 lemon (avoiding the white part which makes it bitter) and set it aside.
    Squeeze the 4 lemons with a juicer to get the juice, which should be between 2/3 and 3/4 cup (depending on how “lemony” you want it).

  • Now prepare the lemon syrup: take a small saucepan and boil over moderate heat: 1 3/4 cups of water, with the zest of 1 grated lemon and 7 3/4 oz of sugar, until the sugar is well dissolved.

    Once the sugar is well dissolved, turn off the heat and let it cool, then add the lemon juice and 1 1/3 tbsp of limoncello (or if you don’t like it or don’t have it at home, replace the 1 1/3 tbsp of limoncello, with an equal amount of lemon juice).

  • Take a small container and beat 1 egg white until stiff.
    At this point, slowly add the prepared lemon syrup, previously filtered, to the beaten egg white.

  • Place the sorbet in the freezer and, every 30 minutes stir it with a hand whisk or with an immersion blender, for about 1 1/2 – 2 hours until the desired creaminess is reached.

  • Don’t worry if you see the egg white separating from the lemon liquid, it’s normal! Just mix it with the whisk to obtain the right consistency.

  • Serve this creamy and super refreshing lemon sorbet, accompanied by ladyfingers (optional), or you can serve it inside small lemons from which you have previously removed the top and pulp (from which you will extract the juice).

Notes and Tips

I made the sorbet without an ice cream maker, but of course, if you have one, it works just as well!
