Crispy New Potatoes in the Oven, with Paprika

If you like super crispy oven potatoes, save this recipe right away and you’ll never go without it again.

These oven-baked new potatoes are amazing: super crispy, delicious, and tasty due to the presence of paprika among the ingredients, making them a truly tantalizing and appetizing side dish.

If you don’t love paprika, I’ll explain how to do it in the Notes and Tips section.

Ingredients for Crispy New Potatoes in the Oven

  • 2.5 lbs new potatoes (with skin)
  • 1 tbsp coarse salt
  • 1 tbsp vinegar (white)
  • 7 oz extra virgin olive oil (quality)
  • 1 tbsp fine salt
  • to taste black peppercorns (ground)
  • 3 oz extra virgin olive oil
  • 1 tbsp garlic powder
  • 1 tbsp hot paprika (or smoked)
  • 1 cup breadcrumbs
  • 1.5 oz grated parmesan
  • 0.5 tsp fine salt
  • 0.25 oz grated parmesan
  • 2 tbsp breadcrumbs
  • 1 pinch fine salt
  • 1 pinch black peppercorns (ground, optional)

Steps for Crispy New Potatoes in the Oven

Wash the new potatoes well, preferably with a brush, to remove any dirt residues.

Place a pot with plenty of water, a pinch of coarse salt, and a tablespoon of white vinegar on the stove. Bring the water to a boil and then add the whole new potatoes with the skin. Cook for about 20 minutes from the time the water returns to a boil.

  • Then, drain the potatoes, let them cool slightly, cut them in half lengthwise, and season them with 3.5 oz of extra virgin olive oil, 1 tbsp of fine salt, and pepper.

  • Take a bowl and mix well: 3 oz of extra virgin olive oil, 1.5 oz of grated parmesan, 1 cup of breadcrumbs, 1 tbsp of garlic powder, 1 tbsp of hot paprika (or smoked), 0.5 tsp of fine salt.

  • Take a shallow baking tray, about 16×12 inches, line it with wet and wrung out parchment paper, spread it well with all the prepared paprika sauce and on top of the sauce, arrange the new potatoes, cut side down, next to each other (as shown in the photo below).

  • Finally, sprinkle the potatoes with: 0.25 oz of grated parmesan, 2 tbsp of breadcrumbs, a pinch of salt, a pinch of ground black pepper, and a drizzle of extra virgin olive oil.

    The tray should be of the right size (mine is 16×12 inches), and the potatoes should be arranged all together as shown in the photo below, with no spaces.

  • Bake the tray in a preheated static oven at 430°F for about 30 minutes (depending on your oven).

  • Once cooked, wait 2 minutes and arrange the crispy and tasty new potatoes on a serving plate, serve hot.

Notes and Tips

If you need to make these potatoes also for children (or if you don’t like paprika), you can omit the paprika and pepper, and follow the same procedure (perhaps you can add a sprig of rosemary or sage), they will still turn out delicious and crispy as seen in the second photo below.
