Extra-Tall Coffee Cake
This recipe is tried and tested and has been circulating online for years. I finally got to try it myself, and it’s a very tall and fluffy cake that you won’t miss from the cafe! At my place, it goes in a flash!
This extra-tall coffee cake is perfect for a healthy breakfast because it’s butter-free and you can use high oleic sunflower oil, which has antibacterial, anti-inflammatory, and anti-cancer properties and helps reduce cholesterol (see notes at the end of the article) while maintaining a neutral taste.
If desired, you can also add 4 thinly sliced apples, seasoned with sugar and cinnamon, to the batter.

Ingredients for Extra-Tall Coffee Cake
- 3 1/4 cups All-Purpose Flour (preferably sifted, I use Caputo Pasticceria)
- 6 Eggs (at room temperature)
- 2/3 cup Whole Milk
- 1/2 cup Vegetable Oil (preferably HIGH OLEIC sunflower oil, see notes at the end of the article)
- 1 3/4 cups Sugar
- 2 tsp Vanilla Extract (or 2 sachets of vanillin, or 1 of cinnamon according to taste)
- 1 packet Baking Powder
- 1 pinch Salt
- 1 Lemon Zest (optional)
- to taste Sugar Crystals (optional)
Tools
- Bowl
- Stand Mixer Kenwood, 7 l Bowl, 1400W power
- or Hand Whisk
- Bundt Pan
Preparation of Extra-Tall Coffee Cake
Separate the egg whites from the yolks and sift the flour with the packet of baking powder.
Beat the yolks with the sugar in a stand mixer with a wire whisk (or with electric beaters) for at least 15 minutes.
Beat the egg whites until stiff peaks form (firm, but not too stiff).
Add to the yolk and sugar mixture: the milk, vegetable oil, pinch of salt, vanilla (or cinnamon), and grated lemon zest (optional).
Finally, very gently add the flour (sifted with the baking powder) and then, using a hand whisk, the beaten egg whites, always very gently to avoid deflating the mixture.
Butter and flour a ring mold about 10 inches in diameter and at least 4 inches tall (I used a chiffon cake mold), sprinkle with sugar crystals (optional), and gently pour in the batter.
Bake the coffee cake in a preheated oven at 356°F, for about 35 minutes (depending on your oven).
Unmold the cake and let it cool.
It’s very soft, so it keeps well under a glass dome for up to 3 days.
Notes and Tips
To prepare this healthy butter-free coffee cake, I used high oleic sunflower oil, which – unlike all other oils (except extra virgin) – does not contain polyunsaturated fats, which are very harmful and are also found in many industrial products (snacks, crackers, etc.).
Oleic acid is a monounsaturated fatty acid that has various interesting properties: it is useful for providing the body with those precious substances known as omega-3 and omega-6 and for reducing “bad” cholesterol in the blood.
High oleic sunflower oil also boasts antibacterial, anti-inflammatory, and anti-cancer properties and is ideal for use raw in salads, in desserts (instead of butter) because it has a neutral taste, and finally it is perfect for frying, as it has a high smoke point.

To achieve a cake this tall, the mold is very important. I used this chiffon cake mold.
