Fried Toma with Sugar and Cinnamon

An unusual, delicious, and super quick dessert to prepare. Toma cheese (or Tuma) pairs perfectly with sugar and cinnamon because Toma is a fresh Sicilian cheese made WITHOUT adding salt, so it doesn’t have the strong taste and saltiness typical of cheeses, but its delicate flavor pairs perfectly with the sweetness of sugar. An ancient Sicilian recipe I saw being prepared on the show “Giusina in cucina”.

Ingredients for Fried Toma with Sugar and Cinnamon

  • 7 oz toma (or tuma)
  • to taste granulated sugar
  • to taste ground cinnamon (optional)
  • to taste sunflower seed oil (for frying, I use the high oleic type)

Steps for Fried Toma with Sugar and Cinnamon

Cut the Toma into slices about 1/4 inch thick (not too thin), take a pan, and heat about a finger’s width of oil, fry them for a few minutes (not too much or the cheese will melt) at a temperature of about 338°F, they should be just golden on both sides.

  • If you don’t have a thermometer at the moment, use our grandmothers’ method: dip a toothpick in the oil, if it starts to bubble, the oil is ready for frying.

  • When all the Toma is fried, coat each piece in sugar and cinnamon (optional, but it goes very well) and serve the slices while still hot.

Notes and Tips

The lack of salt means that Toma (or Tuma) can be used for savory preparations but also sweet ones like in this beautiful, easy, and quick-to-prepare recipe.

For frying, I used high oleic sunflower seed oil, because it has antibacterial, anti-inflammatory, and anti-cancer properties and is useful for reducing cholesterol, also it has a high smoke point, making it ideal for frying (see how to purchase it in the Shopping Tips at the end of the article).
