These German pancakes, besides being practical to prepare, are super soft and delicious: a mix between a pancake and a crepe, you can fill them as you like, my favorites are with sugar and cinnamon, but you can use maple syrup, hazelnut cream, jam, fruit, peanut butter, etc.

Ingredients for the Giant Oven-Baked Pancake

  • 2 eggs (whole)
  • 1/3 cup granulated sugar
  • 1 2/3 cups whole milk
  • 3 tbsp sunflower seed oil
  • 1 1/4 cups all-purpose flour (I use Caputo azzurra, sifted)
  • 2 tsp vanilla extract
  • 1/4 tsp fine salt
  • 1 1/2 tbsp granulated sugar (for filling)
  • 1 tsp ground cinnamon (for filling)
  • to taste vanilla powdered sugar (for garnish)

Steps for the Giant Oven-Baked Pancake

Preheat the oven to 392°F (200°C).

  • Take a bowl and with the electric whisk (or by hand) beat the two whole eggs with the sugar and vanilla, then add the oil, salt, and slowly sifted flour, alternating with the milk. Work the mixture for about 5 minutes, you will get a liquid batter, it should be like this.

  • Take a baking pan about 16×12 inches (40×30 cm, mine is adjustable), line it with parchment paper and pour all the batter into the pan.

  • Bake the pan in a preheated oven at 392°F for about 20 minutes.

    As soon as it is out of the oven, sprinkle the surface with vanilla powdered sugar and 1 1/2 tbsp of granulated sugar, mixed with 1 tsp of cinnamon (or fill as you prefer).

Notes and Tips
