Incredibly Tender Milk-Braised Veal Roast
This is the main course we always prepare in our family for celebrations and holidays, like Christmas, Easter, etc.
The family recipe is from my mom and is thoroughly tested and guaranteed to succeed, the result of three hours of cooking is an incredibly tender veal roast, accompanied by a fantastic thick and creamy sauce.

Ingredients for the Incredibly Tender Milk-Braised Veal Roast
- 1.8 lbs veal round (or veal rump, veal is also fine)
- 4.2 cups whole milk
- 5.6 tbsp butter
- 3 slices bacon
- as needed all-purpose flour
- as needed salt
- as needed rosemary
- 1 espresso cup cognac (small)

Preparation of the Incredibly Tender Milk-Braised Veal Roast
Stuff the veal with bacon slices, wrapping them around the meat with kitchen twine.
Coat the bacon-stuffed veal piece with flour and heat the milk with rosemary.
Take a high-sided oval casserole, melt the butter in it, place the meat in the pot and brown it over high heat, deglaze with cognac.
Pour the hot milk over the browned meat, add fine salt, and lower the heat to minimum, cooking the meat for about 3 hours.
Remove the meat from the pot and wrap it in aluminum foil.
Meanwhile, let the remaining sauce in the pot brown, deglazing with a bit of cognac to reduce and color it.
Wait at least 15 minutes and then slice the roast and serve it with its hot sauce blended (optional).

How to Tenderize a Cooked Roast?
Once the roast is fully cooked, wrap it completely in aluminum foil, letting it rest like this for about 10 minutes.
How to Store a Cooked Roast?
You can store the veal roast in the refrigerator for about 3 days, covered with plastic wrap. You can also freeze the roast sliced, but freeze the sauce separately.
