Banana Bread in Air Fryer

I admit, I was a bit skeptical about preparing desserts in the air fryer. With this banana bread, I was absolutely convinced: I got a sweet, soft, moist and perfectly cooked even at the bottom, in a short time and with energy savings. The only precaution is to bake the desserts at a temperature of around 284°F-320°F (to cook it well internally) and in small containers of about 8 inches in diameter if your basket is at least 8.7 inches. Otherwise, if you have a smaller basket, use a 7-inch mold to facilitate air circulation.

This light banana bread, very soft and fluffy, just like in the home oven. It’s ideal for a healthy breakfast or snack, it’s a light dessert with a low glycemic index, as it is made with whole spelt flour and whole cane sugar and honey.

The advantages of cooking in an air fryer are healthy and many: you don’t have to preheat the oven, cooking is more quick, economical, and healthy (very few fats are needed), you don’t dirty a lot of pots and pans, and it doesn’t produce smoke or odors

Please note that the temperature and cooking times are approximately indicative, because much depends on your type of air fryer (mine is Philips), however, the recipes on my Blog are all previously and rigorously tested by me (so more than tried and tested). In any case, I still recommend checking the cooking every now and then, to better adjust times and temperature to your air fryer.

Ingredients

  • 1 cup whole spelt flour (sifted, or your preferred flour)
  • 3 bananas (ripe, the third is for garnishing the top of the dessert)
  • 5 tbsps butter (softened, at room temperature)
  • 1/3 cup muscovado sugar (or whole sugar)
  • 1 egg (whole)
  • 2 tbsps acacia honey (about 2 tablespoons)
  • 1 1/4 tsps baking powder
  • 2 tsps ground cinnamon
  • 1 tsp vanilla extract
  • 1 pinch fine salt
  • to taste vanilla powdered sugar (to garnish the dessert)

  • Mold square for air fryer (18 or 22 cm)
  • Air fryer paper with holes
  • Mixer Braun with various accessories, 1000W power
  • Grills Reusable non-stick grills, heat resistant.

Steps

You can work all the ingredients by hand, I used an immersion blender to speed up. Add the softened butter and brown sugar to the mixing bowl and blend for 1 minute, obtaining a cream, then add the vanilla extract, cinnamon, a whole egg, a pinch of salt, and honey and blend for about 3 minutes.

  • Finally, add to the dough two ripe bananas (it is important that they are ripe, as this gives the banana bread a soft and moist texture), sifted spelt flour, and baking powder and blend for another 2 minutes until you have a creamy and lump-free dough. Preheat the air fryer for 2 minutes at 284°F.

  • Grease the cake mold and place a perforated paper for air fryer on top (to unmold the cake more easily), pour the dough into the mold and garnish the surface with a banana cut into slices.

    Place the mold in the air fryer basket and set the temperature to 284°F for 20 minutes.

  • Then leave the mold in the turned-off air fryer for another 20 minutes.

  • Once the dessert has cooled, unmold it and sprinkle with powdered sugar, then serve it in slices for breakfast, snack, or tea time.

    It keeps soft for about 2-3 days wrapped in aluminum foil, and you can also freeze it cooked and sliced.

    If you don’t have an air fryer, you can easily make the banana bread in the oven in static mode at 356°F for about 30 minutes

    Banana bread is considered a “quick breadwith bananas (i.e., made with artificial leavening, quickly, and not with sourdough). It seems that banana bread was invented by American housewives during the Great Depression to avoid wasting overripe bananas, which were very expensive fruits at the time.
