I admit, I was a bit skeptical about making desserts in the air fryer. With this banana bread (banana cake), I absolutely changed my mind: I achieved a sweet, soft, moist and perfectly cooked even at the bottom, in a short time and with energy savings.

The only trick is to bake the desserts at a temperature of about 284°-320°F (to cook it well internally) and in small containers of about 8 inches in diameter if your basket is at least 9 inches. Otherwise, if you have a smaller basket, use a 7-inch pan, to facilitate air circulation.

This light banana bread is very soft and fluffy, just like in a home oven. It’s ideal for a healthy breakfast or snack, it is a light dessert with low glycemic index, because it is made with whole spelt flour and whole cane sugar and honey.

The advantages of cooking in the air fryer are healthy and many: you don’t have to preheat the oven, the cooking is faster, more economical and healthy (requires very few fats) and you don’t dirty many pots and pans, and it doesn’t produce smoke or odors

I want to clarify that the temperature and cooking times are approximately indicative, because it greatly depends on your type of air fryer, however, the recipes on my Blog are all previously and rigorously tested by me (therefore more than proven). Anyway, I still recommend checking the cooking occasionally, to better adapt times and temperature to your air fryer.

Ingredients for Light Banana Bread in Air Fryer

  • 1 cup whole spelt flour (sifted, or flour of your choice)
  • 3 bananas (ripe, the third is used to garnish the top of the cake)
  • 5 tbsp butter (soft, at room temperature)
  • 1/3 cup muscovado sugar (or whole cane sugar)
  • 1 egg (whole)
  • 2 tbsp acacia honey (about 2 tablespoons)
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 pinch fine salt
  • to taste vanilla powdered sugar (to garnish the cake)

Steps for Light Banana Bread in Air Fryer

You can work all the ingredients by hand, I used a hand blender to speed up the process. Add the soft butter at room temperature and the cane sugar to the blender and blend for 1 minute to obtain a cream, then add the vanilla extract, cinnamon, a whole egg, a pinch of salt, and honey and blend for about 3 minutes.

  • Finally, add two ripe bananas to the dough (it is important that they are ripe, as this gives the banana bread a soft and moist texture), the sifted spelt flour, and the baking powder and blend for another 2 minutes, until you have a creamy and lump-free dough. Preheat the air fryer for 2 minutes at 284°F.

  • Grease the cake pan and place a perforated air fryer parchment sheet on top (to make it easier to unmold the cake) pour the dough into the pan and garnish the top with a banana cut into slices.

    Place the pan in the air fryer basket and set the temperature to 284°F for 20 minutes.

  • Then leave the pan in the turned-off air fryer for another 20 minutes.

  • Once the cake has cooled, unmold it and sprinkle with powdered sugar, then serve it sliced for breakfast, snack, or tea time.

    It stays soft for about 2-3 days wrapped in aluminum foil and you can also freeze it cooked and sliced.

    If you do not have an air fryer, you can easily prepare the banana bread in a static oven at 356°F for about 30 minutes
