Light Cream of Zucchini and Onions
A light and creamy soup, despite the absence of potatoes, is not easy to find. It warms you up in winter, but it’s also good cold in summer. Only 2 ingredients.
This easy and quick, gluten-free soup, light and belly-reducing, a true boon for our bodies: zucchinis and onions have a very low-calorie content, making them particularly suitable for low-calorie diets: they are low in salt, diuretic and help to fight urinary tract issues, with the onion known for its strong antibacterial, antibiotic, and disinfectant action.
Vegan, vegetarian, and gluten-free recipe.

Once the zucchini and onions are cooked, blend them several times with the immersion blender (if you like, you can also add a pinch of fresh or powdered ginger).
Add raw extra virgin olive oil and basil.
If desired, you can also add grated Parmesan and serve with croutons. In summer, it’s also good cold.
Shopping Tips!!!
To cut the vegetables, I used this very convenient cutting board with two side trays: one to gather the cut food and the other to gather the scraps.
To blend the zucchini and onions and obtain a smooth cream, I used my very convenient Braun MultiQuick 7 Hand Blender.
