Light Fit Ciccio Pancake with Orange
I discovered these thick and fluffy protein pancakes on Instagram, seeing the pictures made me crave them, then I found out they are also protein and light, so I had to try them and indeed they are truly delicious, light and can be made in a thousand different and tasty variations, even accompanied by maple syrup or light creams.
Ideal for a healthy, protein, and light breakfast, gluten and lactose free.

Ingredients for Light Fit Ciccio Pancakes
- 3 oz oat flour
- 3.9 oz egg whites
- 1/3 cup orange juice
- 3/5 tsp vegetable oil (or coconut oil)
- 1 tsp baking soda
- 2 tbsp lemon juice
- to taste maple syrup (optional)
- unsweetened cocoa powder (optional)

Preparation of Light Fit Ciccio Pancakes
Squeeze the orange juice with the juicer.
Pour 3.4 oz of egg whites into a bowl and add the oat flour and 1/3 cup of orange juice, mix well with a whisk – without whisking – until the mixture is smooth and homogeneous.
Finally, add 1 tsp of baking soda to the mixture and squeeze over 2-2.4 tbsp of lemon juice (filtered); you should get a little foam.
Let the mixture sit for about 20 seconds, then mix well, making the foam disappear completely.It is important to make all the foam disappear, otherwise, the taste will be bitter in some spots.
Heat a non-stick saucepan with a 5.5-inch diameter (important diameter!) and high edges (see Shopping Tips at the end of the article), then pour in the mixture, lower the flame to minimum and cover with a lid.
The high edges of the saucepan, the diameter, and the lid are important because they help the pancake to rise in height and make it nice and “fluffy”.
It is not necessary to grease the saucepan with oil or butter.
When the surface is set and consequently almost completely cooked, flip the pancake and let it cook for a few more seconds, always with the lid on. Use a soft silicone spatula to flip it.
Once the pancake is ready, remove it from the heat and let it cool on a rack.
If desired, serve the pancake, accompanied by maple syrup, or add a dusting of unsweetened cocoa powder, with grated orange zest for garnish.
Notes and Tips
It is not necessary to add sugar to the batter (especially if you want it light) due to the presence of orange which gives sweetness, BUT if desired, you can add a tablespoon of brown sugar and also 0.7 oz of dark chocolate chips.
You can also vary the type of flour, creating the following mixes: oat, barley, coconut, rice – oat, whole grain, rice, coconut – oat, amaranth, coconut, whole grain.
The lid is fundamental for a good result of the pancake and it is important to keep the flame on low, until the surface is completely set (1-2 minutes per side).
Be careful not to exceed the cooking time, otherwise the pancake will become harder.
The pancakes can be stored for 3 to 4 days if kept in the refrigerator wrapped in plastic wrap, and they can also be frozen.
