Ingredients for Light Turkey and Onion Stew

  • 1 lbs turkey (cut into small pieces)
  • 4 golden onions
  • 1 glass dry white wine
  • 1 glass water
  • to taste chili pepper
  • to taste salt
  • to taste paprika (optional)

Tools

  • Bowls of various sizes
  • Mezzaluna sharp, with double blade
  • Cutting Board with two side trays for scraps
  • High-sided Casserole cast iron, Le Creuset

Preparation of Light Turkey and Onion Stew

  • Wash and peel the onions and cut them into medium-thick slices. I buy the stew already cut into pieces by the butcher, and if they are large, I cut them into smaller pieces (see photo).

  • Take a high-sided casserole and pour 3 tablespoons of oil, chili pepper, and if desired, paprika (optional), heat and add the turkey pieces.

  • Brown the turkey, then add the sliced onions and let them wilt for 5 minutes with a glass of dry white wine. Also, add salt.

  • When the onions have also wilted, pour a glass of hot water into the casserole, cover it with a lid, and cook on low heat for 30 minutes.

  • After 30 minutes of cooking, remove the lid from the casserole and cook for another 30 minutes over medium heat.

  • Finally, glaze the stew on high heat, and you will see a delicious and creamy sauce form, as shown in the photo. Serve hot.
