You can also directly buy pasteurized yolks, available in cartons at some large supermarkets, especially if the tiramisu is to be eaten by pregnant women.
The tiramisu can be stored in the fridge for at least 2 days, and it can also be frozen, BUT if you want to freeze it (even in single servings), you must do it the same day of preparation to avoid contamination from fridge bacteria. It can be stored in the freezer for about a month, well wrapped in plastic wrap (or even better in an airtight container). When thawing, place it in the fridge for at least 4 hours before serving (NOT at room temperature) and consume within 12 hours of thawing.
