Perfect American Pancakes

I don’t know about you, but I love TALL pancakes and with this recipe you can get them just like that: tall and fluffy! Foolproof and tested recipe, easy and quick.

Perfect for breakfast, snack or a brunch (both summer and winter).

These pancakes are delicious with my Quince and Orange Jam, also great with Apple Butter, for a healthy breakfast.

Ingredients for Perfect American Pancakes

  • 1.75 cups All-purpose flour
  • 3/4 cup Greek yogurt (or even better Kefir, I used Total Fage)
  • 1/2 cup Whole milk
  • 1 Egg (medium)
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • tablespoon Sugar (1 and 1/2 tablespoons)
  • 1/4 teaspoon Salt
  • 4 tablespoons Butter (melted)

  • Hand whisk stainless steel
  • Tall saucepan 16 cm
  • Bowls Guzzini set of bowls in various sizes

Preparation of Perfect American Pancakes

  • Take a bowl and sift the dry ingredients: flour, baking powder, baking soda, sugar, and salt.

    Put the butter in a small saucepan and melt it gently, in a bain-marie.

  • In another container, mix the liquids: Greek yogurt (or kefir), milk, and the egg.

    Also add the melted, cooled butter and mix again.

  • Briefly mix the liquids with the dry ingredients using a fork (not a whisk).

    The batter should be mixed roughly, it should remain thick with plenty of flour lumps (which will disappear during cooking) and NOT overworked. (trick)

    If you mix too long, the batter will lead to rubbery and hard pancakes.

  • Take a tall and narrow non-stick saucepan about 6-7 inches in diameter (trick), I used the one in the photo, 5.5 inches

    Anyway, if you don’t have this saucepan, you can also use a normal non-stick pan, BUT with the tall saucepan, the fluffy result is guaranteed.

  • If needed, add a little butter (or oil) to grease the pan.

     

  • Pour a generous spoonful of batter into the pan for each pancake.

  • Cook the pancakes on both sides until they are golden (but not too much) and cooked through.

  • Serve these perfect American pancakes hot with maple syrup or honey, a small piece of butter, or fresh fruit.

Notes and Tips

The pancakes can be stored in the fridge for 3-4 days wrapped in aluminum foil or food bags, and they can also be frozen (move them from the freezer to the fridge the night before consuming).
