Crepes filled with Nutella are irresistible, one leads to another and they are always loved by everyone: kids and adults. Moreover, for parties, celebrations, and occasions, they can be prepared in advance. Ideal also for breakfast, snack, or brunch.

Ingredients for Quick Nutella Crepes
- 2 cups all-purpose flour (sifted)
- 3 eggs
- 1.5 cups whole milk
- 0.85 cups water (boiling)
- 1 tbsp white wine vinegar
- 1/4 cup sugar
- 2 tbsp sunflower oil
- 2 tsp vanilla extract
- 1 pinch fine salt
- 15.9 oz Nutella® (for filling)
- to taste butter (to cook the crepes)
- to taste vanilla powdered sugar (optional)
- to taste unsweetened cocoa powder

Steps for Quick Nutella Crepes
In a bowl, pour in the 3 whole eggs, sugar, vanilla extract, a pinch of salt, sunflower oil and beat with an electric mixer (or a hand whisk), add milk, vinegar, and sifted flour, mix well to avoid lumps, finally add the boiling water and mix, you should get a rather liquid batter.
If lumps have formed, strain the batter through a sieve. Let the mixture rest for 30 minutes in the fridge.
Take a non-stick pan, about 8 inches in diameter, and melt a little butter in it. When it’s hot, pour two small ladles of batter and cook the crepes over medium-low heat.
Cook the crepes, one at a time, for 1 to 2 minutes on one side, then flip to the other side and cook for another minute (you can flip the crepe as soon as you see small bubbles forming on the surface).
Let the crepes cool well, fold them in half, fill with Nutella, and then roll them up (see photo above). Arrange the crepes on a serving plate and, if desired, dust with vanilla powdered sugar or unsweetened cocoa powder.

How to store crepes?
Once cooled, crepes (or pancakes) can be stored in the fridge covered with food wrap for 24/48 hours.
Crepes can also be frozen without filling (individually, laid horizontally, separated by a sheet of parchment paper) for up to 3 months. When needed, they are taken out of the freezer and thawed in the fridge for 6 to 8 hours. To revive them, simply heat them in a pan with a pat of butter and then fill as desired.
