Simply assemble all the ingredients on a nice serving plate and in just a few minutes, you’ll have a fish appetizer, fat-free and gluten-free. A smart and practical recipe, perfect not only for Christmas but also for the New Year’s Eve dinner.
I serve it with warm buttered croutons. You can prepare the croutons even with an air fryer, if you follow my recipe, they turn out perfect, crispy outside and soft inside. But the buttered croutons are optional; if the salmon is of good quality, it is equally a delicious appetizer.

I buy the salmon already sliced thinly from my trusted deli, but you can also buy it packaged, as long as it’s of good quality.
Arrange the salmon carpaccio on a serving plate, mince the dill, and garnish with pink pepper, lemon slices, and green olives. If you wish, accompany the appetizer with warm buttered croutons.

How to recognize good quality salmon ?
Upon visual examination, good salmon should appear uniformly colored, whether light or dark, slightly shiny along the edges, which should not be dry, nor tend to yellow and brown. The slices should then be separate from each other and wide. The white streaks should be thin; otherwise, it means the salmon is very fatty and has been subjected to intensive farming, thus not of good quality.
