Ingredients for Simple Christmas Cookies with Honey and Cinnamon
- 2 1/4 cups all-purpose flour
- 1 egg (whole)
- 2/3 cup butter (cold, quality)
- 1/2 cup brown sugar (dark, I use Muscovado)
- 1 packet ground cinnamon
- 1 tbsp vanilla extract
- 2 tbsps honey
- 2 tbsps whole milk
- 1 pinch fine salt

Preparation of Simple Christmas Cookies with Honey and Cinnamon
Sift the flour with the cinnamon.
In a stand mixer with a paddle attachment, quickly work the cold butter with the sifted flour and cinnamon.
Add the honey, egg, vanilla extract, salt, and sugar to the mixture.
Finally, add the milk.
Let the dough rest in the fridge for 30 minutes. It’s important for cutting the cookies well.
After the indicated time, take the dough and roll it out with a rolling pin on a well-floured workspace (you can also use powdered sugar) to a thickness of 3/8 inch.
Cut the cookies first with a round cutter and then press a Christmas stamp on top (see Shopping Tips below) or cut them directly with Christmas-shaped cutters.
Place the cookies on a baking sheet lined with parchment paper and put them in the fridge for 30 minutes, this last step helps maintain their shape in the oven, but it is not essential.
Bake the cookies in a preheated oven at 350°F for 15 minutes.
You can store the cookies for a long time in food bags or tin boxes.
