Remember penne with salmon and vodka, so popular in the 80s and 90s? Scorned by gourmet chefs but always delicious to me, this is the lasagna version revisited, and it’s truly tasty and easy to prepare! Ideal for occasions and holidays like Christmas and New Year.

Ingredients for Smoked Salmon, Cheese Spread, and Provola Lasagna

  • 14 oz smoked salmon (in package, quality)
  • 9 oz lasagna sheets (fresh or dry)
  • 8.8 oz cheese spread (or Philadelphia (I use Tiger cheese spread))
  • 1 onion
  • 5 oz extra virgin olive oil
  • 2 oz vodka (or Cognac)
  • to taste whole milk
  • 12 oz smoked provola
  • to taste butter
  • to taste grated parmesan cheese

Steps for Smoked Salmon, Cheese Spread, and Provola Lasagna

Take a cutting board and chop the onion and salmon into small pieces.

  • Place a pan on the stove, heat the oil, and add the chopped onion. Let it soften for about 80 minutes, deglazing with the liquor, then add the smoked salmon pieces and let them flavor for a few minutes.

  • Add the cheese spread (or Philadelphia) and let it melt with a little milk and vodka (or cognac) until it becomes a cream. Let the mixture cool slightly.

  • Meanwhile, take a baking dish and butter it well, cover the bottom with raw lasagna sheets, pour a layer of salmon cream on top, then slices of smoked provola, grated parmesan (optional), and another layer of lasagna. Alternate layers, finishing with lasagna, brush the surface with melted butter, and sprinkle with a little grated parmesan.

  • Bake the lasagna in a preheated static oven at 350°F for about 30 minutes, remove from the oven, and let it cool for 5 minutes before serving.
