Soft Savory Tart
This soft tart (egg-free) is a truly delicious wildcard and easy to prepare for any occasion, can be filled in many ways with fridge leftovers and is an ideal summer appetizer to prepare in advance, also great for summer cocktails.
I filled it “caprese style”, with cream cheese, mozzarella, and tomatoes, but it’s also delicious with stracchino and salmon, for example. A cold dish that can also be prepared for picnics at the beach or mountains

A very easy and quick summer appetizer, prepares in 10 minutes! It can also serve as a main course.

Ingredients for the Soft Savory Tart

For the soft savory tart

  • 3/4 cup all-purpose flour
  • 1/3 cup potato starch
  • 4 1/4 oz ricotta
  • 2/3 cup whole milk
  • 3 1/2 tbsp sunflower oil
  • 1/3 cup parmesan
  • 1 packet instant yeast for savory preparations
  • to taste fine salt
  • 2 beefsteak tomatoes
  • 3 1/2 oz cream cheese
  • 10 1/2 oz mozzarella
  • to taste extra virgin olive oil
  • to taste fine salt
  • to taste basil (abundant)

  • Mixer electric Philips, with 450 W power
  • Knife
  • Pan clever, Nordic Ware

Preparation of the Soft Savory Tart

  • First, prepare the base of the soft tart by mixing with an electric whisk: flour, potato starch, grated parmesan, ricotta, milk, seed oil, and salt.

    Finally, add the packet of instant yeast for savory cakes and mix well.

  • Pour the mixture into a “clever pan” of 8.5-9.5 inches (see note at the end of the article) oiled and floured and bake at 350°F for about 25-30 minutes.

  • Cool the soft tart, then flip it and fill it with a layer of spreadable cheese (I used Philadelphia), followed by alternating slices of mozzarella and tomato.

  • Then season with basil, extra virgin olive oil, salt, and pepper (optional). It is eaten cold.

  • Another filling variation could be stracchino and smoked salmon, perhaps during the Christmas holidays.
