Spaghetti with Broccoli Cream, Robiola and Walnuts

A very simple, light, tasty, and quick first course to prepare, even for beginners in the kitchen. Easy recipe!

A dish rich in vitamins: remember that 100 grams of broccoli satisfy more than half of the recommended daily intake of vitamin C, so it’s ideal to offer to children (without chili, of course)!

Spaghetti with broccoli cream

Ingredients

  • 7 oz Broccoli
  • 12.7 oz Thick Spaghetti (or linguine)
  • 3.5 oz Robiola
  • 12 Walnuts (medium size and shelled)
  • 1 clove Garlic
  • to taste Salt (and pepper)
  • to taste Extra virgin olive oil
  • to taste Chili (optional)

  • Immersion Blender Braun, 1000 W power and various accessories

Preparation

  • Wash the broccoli well and clean them by removing the hardest part and dividing them into florets.
    Place a pot with plenty of salted water on the stove, and once it boils, add the broccoli and boil for about 8 minutes.

  • Once the broccoli are boiled, coarsely chop the shelled walnuts and place a pan on the stove with a drizzle of oil (I also added chili) and brown the chopped garlic (be careful not to let it darken), then turn off the heat and add the chopped walnuts to the garlic-flavored oil, along with the previously boiled and well-drained broccoli (BUT keep the cooking water).

    Add the robiola to the pan and mix all the ingredients, mashing the broccoli with a fork to obtain a creamy green sauce, finally add salt and pepper (according to your taste).

  • Cook the pasta in the previously reserved broccoli cooking water and, once well al dente, pour it into the pan with the broccoli, robiola, and walnuts mixture, along with a small cup of the cooking water, and toss over high heat for about 3 minutes to make it even more creamy. Serve the spaghetti with broccoli cream, piping hot.
