Ingredients for Speedy Tomato Bites
- 3 oxheart tomatoes (or Sorrento salad tomatoes)
- 5 oz fior di latte (or provola cheese)
- to taste extra virgin olive oil (quality)
- to taste basil (plenty)
- to taste fine salt

- Cutting board with two side trays, oven-safe
- Mezzaluna sharp with double blade
- Bowl
- Parchment paper
- Brush
- Baking tray non-stick, carbon steel
Steps for Speedy Tomato Bites
Buy oxheart tomatoes, even better if you find the Sorrento version: slightly flatter than the “oxheart”, green color with reddish hues, with few seeds and all compact flesh that allows you to easily slice them without smudges or breakage. The sweet and soft taste and the crispness of the flesh make them a true star of summers on the Sorrento coast.
Clean the tomatoes, slice them, not too thin, and place them on a baking tray brushed with extra virgin olive oil, salt them and brush the tomatoes with extra oil.
Slice or dice the fior di latte (or provola) and place it on each tomato slice, finally sprinkle with plenty of chopped basil and a drizzle of raw oil.
Finally, place the tray in a preheated oven at 356°F, for about 15 minutes, the cheese should melt.
Serve the tomato bites, hot and gooey, but I assure you they are also good cold, and if there are leftovers, you can use them to dress pasta the next day, but I doubt there will be any left because they are irresistible.
