Ingredients for Speedy Tomato Mini Pizzas
- 3 beefsteak tomatoes (or Sorrento salad tomatoes)
- 5.3 oz mozzarella (or provolone)
- to taste extra virgin olive oil (quality)
- to taste basil (plenty)
- to taste fine salt

- Cutting board with two side trays, also oven-safe
- Mezzaluna sharp with double blade
- Bowl
- Parchment paper
- Brush
- Baking tray non-stick, carbon steel
Steps for Speedy Tomato Mini Pizzas
Buy beefsteak tomatoes, even better if you find the Sorrentine variety: slightly more flattened than the “beefsteak”, green with reddish hues, with few seeds and all firm pulp that allows easy slicing without smearing or crumbling. The sweet and soft taste and the crispness of the pulp make it a true summer star on the Sorrento coast.
Clean the tomatoes, cut them into slices, not too thin, and place them on a tray brushed with extra virgin olive oil, salt them, and also brush the tomatoes with extra oil.
Slice or dice the mozzarella (or provolone) and place it on each tomato slice, finally sprinkle with plenty of chopped basil and a drizzle of raw oil.
Finally, bake the tray in a preheated oven at 356°F, for about 15 minutes, the cheese should melt.
Serve the tomato mini pizzas, hot and cheesy, but I assure you they are also good cold and if there are leftovers, you can also dress pasta the next day, but I doubt any will be left because they go fast.
