Ingredients for the Spiced Vegan Christmas Cake
- 2 1/2 cups Organic Flour
- 3/4 cup Brown Sugar
- 1/2 cup Vegetable Oil (of good quality)
- 2 1/2 tsp Cream of Tartar (about half a packet)
- 3/4 cup Almond Milk
- 1 large orange
- 1 tsp Ground Cinnamon
- 1 pinch Nutmeg
- tsp Ground Anise
- as needed Orange Honey (optional)
- as needed Red Currants (for decorating)

- Scale digital, with removable bowl and alarm timer
- Bowls set of Guzzini bowls of various sizes
- Mixer electric Philips, with 450 W power
- Pan springform, 8 inches
Preparation of the Spiced Vegan Christmas Cake
The cake is for a 8-inch diameter pan. If the pan is smooth, cover it with parchment paper; if it’s fluted (like the one I used in the photo), grease it with oil and dust with flour.
In a bowl, pour the oil, almond milk, and the juice of an orange. Add the grated orange zest and all other spices, along with the sugar, and beat these ingredients with an electric mixer (or a hand whisk). Lastly, add the flour and cream of tartar, and mix until the batter is smooth and homogeneous.
Pour all the batter into the pan and bake in a preheated oven at 356°F, bake the cake for about 45 minutes (depending on your oven).
Serve this soft spiced vegan cake, sprinkled with powdered sugar or with a drizzle of maple syrup (for non-vegans also honey), and decorate as desired.
