Super Crispy Oven-Roasted New Potatoes with Paprika
If you love super crispy oven-roasted potatoes, save this recipe right away, and you won’t be able to do without it anymore.
These oven-roasted new potatoes are amazing: super crispy, delicious, and tasty due to the presence of paprika among the ingredients, making them a tempting and appetizing side dish.
If you don’t like paprika, I’ll explain how to do it in the Notes and Advice section.

Ingredients for Super Crispy Oven-Roasted New Potatoes
- 2.64 lbs new potatoes (with skin)
- 1 tablespoon coarse salt
- 1 tablespoon vinegar (white)
- 0.42 cup extra virgin olive oil (quality)
- 3 teaspoons fine salt
- to taste black peppercorns (ground)
- 0.33 cup extra virgin olive oil
- 1.4 tablespoons garlic powder
- 1.2 tablespoons hot paprika (or smoked)
- 0.33 cup breadcrumbs
- 0.35 cup grated Parmesan cheese
- 0.76 teaspoon fine salt
- 0.04 cup grated Parmesan cheese
- 0.06 cup breadcrumbs
- 1 pinch fine salt
- 1 pinch black peppercorns (ground, optional)

Steps for Super Crispy Oven-Roasted New Potatoes
Wash the new potatoes well, preferably with a brush, to remove any dirt residues.
Place a pot with plenty of water, a handful of coarse salt, and a tablespoon of white vinegar over the heat. Bring the water to a boil, then add the whole new potatoes with the skin. Cook for about 20 minutes starting from when the water returns to a boil.
Then, drain the potatoes, let them cool slightly, and cut them in half lengthwise. Season them with: 0.42 cups of extra virgin olive oil, 3 teaspoons of fine salt, and pepper.
Take a bowl and mix well: 0.33 cups of extra virgin olive oil, 0.35 cups of grated Parmesan cheese, 0.33 cups of breadcrumbs, 1.4 tablespoons of garlic powder, 1.2 tablespoons of hot paprika (or smoked), 0.5 teaspoons of fine salt.
Take a shallow baking tray, approximately 16×12 inches, line it with dampened and squeezed parchment paper, spread all the paprika sauce well over the bottom of the tray, and arrange the new potatoes, cut side down, next to each other (as in the photo below).
Finally, sprinkle the potatoes with: 0.04 cups of grated Parmesan cheese, 0.06 cups of breadcrumbs, a pinch of salt, a pinch of ground black pepper, and a drizzle of extra virgin olive oil.
The tray should be the right size (mine is 16×12 inches). The potatoes should be arranged all together as in the photo below, without spaces.
Bake the tray in a preheated static oven at 428°F for about 30 minutes (depending on your oven).
Once cooked, wait 2 minutes, then arrange the super crispy and tasty new potatoes on a serving dish and serve them hot.
In this photo above, you can clearly see the crispiness of the new potatoes, turned over to the underside, the side that lay directly on the paprika seasoning. They are truly exceptional, with an incredible flavor!
Notes and Advice
If you need to prepare these potatoes also for children (or you don’t like paprika), you can omit the paprika and pepper and follow the same procedure (perhaps you can add a sprig of rosemary or sage). They will still be delicious and crispy as seen from the second photo below.
