Super Soft Apple Bundt Cake
This super soft apple bundt cake, passed down from my maternal grandmother, is very easy to prepare quickly and success is guaranteed. It has a crumb so soft and moist that it melts in your mouth, also ideal for children, perfect for a healthy breakfast, it disappears in no time! Ingredients
- 4 cups All-purpose flour
- 2 Eggs (whole)
- 1 1/4 cups Sugar (+ 1/2 cup for seasoning the apples)
- 1/2 cup Butter
- 1 1/4 cups Whole milk
- 2.2 lbs Golden Apples (or russet, for the batter)
- 2 Golden apples (for the surface)
- 1 oz Cognac (or Rum)
- 1 package Baking powder
- 2 tsp Ground cinnamon
- 2 tsp Vanilla extract (or 2 sachets of vanilla)
- 1 pinch Fine salt
- as needed Fresh liquid cream (optional)
- as needed Sugar granules (for the surface, optional)
- 1 Egg white (for the surface, optional)

Preparation
Slice 2.2 lbs of golden apples thinly and dice another 2 apples (to be placed later on the surface).
Season all apples (both sliced and diced) with 1/2 cup of sugar and one sachet of cinnamon.
Then whip for at least 8 minutes the sugar (1 1/4 cups) with the two whole eggs and the salt until bubbles form on the surface.
Next, add the butter (previously melted in a double boiler) and, alternately, the flour (sifted with the baking powder) and the milk, the vanilla, the sachet of cinnamon and the cognac and finally add the sliced apples.
Pour all the apple cake batter into a greased and floured 10-inch diameter mold (with 4-inch high edges), the mold can be as you prefer, round or bundt-shaped. Sprinkle the surface with the diced apples (already seasoned with sugar and cinnamon) and a little more sugar.
Bake the apple cake in a preheated oven at 320 °F (not higher), for about 60 minutes. Once out of the oven, sprinkle with vanilla sugar.

Alternatively, instead of the diced apples, you can simply brush the surface of the batter with an egg white and sprinkle it with sugar granules.
