Super Tender Veal Roast in Milk
This veal roast is the main dish we always prepare in our family for holidays and special occasions, such as Christmas, Easter, etc.
The family recipe is from my mom and it’s tried and true and guaranteed to succeed. The result of three hours of cooking is a super tender veal roast, accompanied by a fantastic thick and creamy gravy.
The secret to a very tender veal roast is to cook it slowly for at least 3 hours.

Ingredients for the Super Tender Veal Roast in Milk
- 1.76 lbs veal eye of round (or veal nut, veal is also fine)
- 4.2 cups whole milk
- 2.8 oz butter
- 3 slices bacon
- as needed all-purpose flour
- as needed salt
- as needed rosemary
- 1 espresso cup cognac (small)

Preparation of the Super Tender Veal Roast in Milk
Lard the veal with the slices of bacon, wrapping them around the meat with kitchen twine.
Flour the larded piece of veal well and heat the liter of milk with the rosemary.
Take a high-sided oval casserole and melt the butter in it, place the meat in the pot and brown it over high heat, deglazing with the cognac.
Pour the hot milk over the browned meat, add the fine salt and lower the flame to the minimum, cooking the meat for about 3 hours.
Remove the meat from the pot and wrap it in a sheet of aluminum foil.
Meanwhile, brown the remaining gravy in the pot, deglazing with a bit more cognac to reduce and color it.
Wait at least 15 minutes, then slice the roast and serve it with its hot gravy blended with an immersion blender (optional).

How to soften cooked roast?
Once the roast is fully cooked, wrap it completely in aluminum foil, letting it rest like this for about 10 minutes.
How to store cooked roast?
You can store the veal roast in the refrigerator for about 3 days, covered with plastic wrap. You can also freeze the roast sliced, but freeze the sauce separately.
