Unusual chocolate chip banana cake (Chocolate banana chip wacky cake”)
The Editorial team of the Club del 27 chose “All in One Pot” as the theme of the month, which means recipes prepared in one single pot and suggested that we choose a recipe from the book “Wonder Pot” (the wonder pot) published by Better Homes Gardens, a historic magazine synonymous with reliability and seriousness.
All the recipes in the book – tested by us at the Club del 27 (a group of friends with the same joy and passion for cooking, learning, sharing, and discussing chosen monthly themes) – were collected on the MTChallenge site, in a magnificent collection of recipes, all of which can be found in this article.
My choice immediately fell on the wacky cake with banana which already promised well from the title (wacky cake = unusual, quirky cake) and do you know why it’s been defined as an “unusual” cake? Because the batter is prepared directly in the baking dish, in just a few minutes, without dirtying other bowls and pots! And moreover, the dish does NOT need to be greased or floured! In short, it’s marvelous: cooking by dirtying only one pot!
It’s an egg-free dessert that remains incredibly soft due to the creaminess of the bananas, and it’s really delicious because it’s enriched with chocolate chips and walnuts. Ideal for a healthy breakfast, a snack, or a brunch.
A banana bread without eggs, which can be prepared in just a few minutes, without wasting time, not to mention the wonderful aroma it releases while baking!!

Ingredients for the “Unusual” Chocolate Chip Banana Cake
- 1 cup + 7 tbsp g all-purpose flour
- 3/4 cup + 2 tbsp g brown sugar
- 2 bananas (medium ripe)
- 1/4 cup ml whole milk
- 6 tbsp g butter
- 1 tsp g baking soda
- g fine salt
- 1 tbsp ml vinegar (white)
- 1/3 cup g dark chocolate chips (quality, I use Callebaut)
- 1/4 cup g walnuts (or pecans)
- to taste pistachio crumbles (for garnish, optional)
- to taste ice cream (optional)
- to taste chocolate (melted or milk or dark, optional)

Steps for the “Unusual” Chocolate Chip Banana Cake
Important: the bananas must be ripe.
Preheat the oven to 350°F
Take a baking dish (or a cast iron pot) 9.5 inches in diameter, which can be used both on the stove and in the oven (see my shopping tips below), not too deep.
Place the dish on the stove and gently melt the 6 tablespoons of butter over medium-low heat (it must NOT fry) and then remove it from the heat.
When the butter is still warm, add the mashed bananas directly into the dish, add the milk, vinegar, and mix. Then add the flour, brown sugar, baking soda, and salt, and mix everything with a wooden (or silicone) spoon. You should mix ONLY a little (not a batter that needs to rise) just long enough to combine all the ingredients together without forming lumps. Finally, sprinkle the cake with chocolate chips and, if desired, walnuts (I use pistachio crumbles).
Bake the banana cake at 350°F for 30 to 35 minutes (do the toothpick test). Remove it from the oven and let it cool slightly, then turn the cake out onto a serving plate.
To make this banana bread even more delicious, you can serve it with vanilla ice cream and melted chocolate or use the chocolate glaze which I explain below, among the Tips.
This dessert is very soft and stays soft for several days, properly covered with plastic wrap (or aluminum).
Notes and Tips
Recipe for Chocolate Glaze (optional):
Ingredients: 1/2 cup butter, 1 1/2 cups powdered sugar, 1/4 cup cocoa, and 1 tablespoon milk.
Beat everything with an electric mixer until light and airy.
Cover the banana cake with this chocolate glaze.
