Vanilla Jova Eggs
The summer hit: the “Jova eggs” created by Jovanotti’s chef, Maria Vittoria Griffoni. Gluten-free recipe
I wanted to try them too, especially because they are very similar to “cloud bread” (or could bread) but are prepared differently. They are also perfect for a healthy, light protein breakfast and they are delicious, soft as a cloud.
I prepared the Jova eggs my way, in a sweet version (without sugar, though) with added vanilla, because I don’t like the taste of eggs nature. They were originally savory, seasoned with a little oil, salt, and pepper.

Ingredients for Vanilla Jova Eggs
- 2 eggs
- 1 tsp vanilla extract
- 3/4 oz chocolate chips (optional)
- 1 tsp lemon juice

- Mixer electric Philips with 450W power
- Brush kitchen brush
- Spatulas set of 3 pastry spatulas
- Baking Tray extendable and adjustable
Steps for Vanilla Jova Eggs
Separate the yolks from the 2 eggs from the whites.
Beat the 2 yolks (with an electric mixer or by hand) and set aside.Then, whip with whisks: the two egg whites until stiff, the vanilla extract, the lemon juice, and—once the egg whites are well whipped—finally add the chocolate chips.
Take a baking tray, cover it with parchment paper, and brush two spaced round circles with the previously beaten yolks (see photo below).
Place the whipped egg whites on the yolk circles, arranging them like a little cloud (they should be tall, as in the photo). Smooth them with a spatula.
Finally, brush the egg white clouds with the rest of the yolks to cover the entire surface of the egg whites.
Bake the prepared eggs in a pre-heated oven at 356°F for about 10 minutes.
As soon as you take them out of the oven, sprinkle them with vanilla icing sugar (optional) and eat immediately.
As you can see, the inside of these Jova eggs is a soft and creamy cloud!

FAQ (Questions and Answers)
The secret to whipping egg whites well and preventing them from deflating?
Egg whites should be whipped slowly, at low speed, for a longer time. This way, smaller and more stable air bubbles will form. Therefore, the egg whites must be whipped very well, to stiff peaks, with peaks that stay upright.
To test if the egg whites are perfectly whipped, try this: if you flip the bowl upside down and the whites remain stuck to the bottom, you’ve done well.Can I cook the “Jova eggs” in an air fryer?
Yes! Preheat the air fryer to 392°F for 5 minutes and then cook the eggs at 320°F for about 7 minutes.
