Vanilla Jova Eggs
The summer hit: the “Jova eggs” created by Jovanotti’s chef, Maria Vittoria Griffoni. Gluten-free recipe
I wanted to try them myself, also because they are quite similar to “cloud bread” but are prepared differently. They are perfect for a healthy, light, protein breakfast and are delicious, soft as a cloud.
I prepared the Jova eggs my way, in the sweet version (without sugar, though) with added vanilla because I don’t like the taste of plain eggs, but they originated as a savory version, seasoned with a little oil, salt, and pepper.

Ingredients for Vanilla Jova Eggs
- 2 eggs
- 1 tsp vanilla extract
- 0.7 oz chocolate chips (optional)
- 1 tsp lemon juice

Steps for Vanilla Jova Eggs
Separate the yolks of the 2 eggs from the whites.
Beat the 2 yolks (with an electric mixer or a hand whisk) and set aside.Then, whip the egg whites to stiff peaks with the vanilla extract, lemon juice, and – once the egg whites are well whipped – finally add the chocolate chips.
Take a baking tray, cover it with parchment paper and brush two round spaced circles with the previously beaten yolks (see photo below).
Place the whipped egg whites on the yolk circles, shaping them like little clouds (they should be quite tall, as in the photo). Round them with a spatula.
Finally, brush the egg white clouds with the remaining yolks to cover the entire surface of the whites.
Bake the prepared eggs in a preheated oven at 350°F for about 10 minutes.
As soon as they come out of the oven, dust them with vanilla powdered sugar (optional) and eat immediately.
As you can see, the inside of these Jova eggs is a soft and creamy cloud!

FAQ (Questions and Answers)
The secret to properly whipping egg whites and keeping them from deflating?
The egg whites should be whipped slowly, at a low speed, for a longer time. This will create smaller and more stable air bubbles. The egg whites should be whipped very well, to stiff peaks, with peaks that stay upright.
Moreover, to know if the egg whites are whipped perfectly, do this test and you won’t go wrong: if by flipping the bowl, the egg whites remain attached to the bottom, you have done well.Can I cook “Jova eggs” in an air fryer?
Yes! Preheat the air fryer to 390°F for 5 minutes, then cook the eggs at 320°F for about 7 minutes.
