In fact, with chicken or a nice juicy roast, they are the ideal side dish.

  • Peel the potatoes and cut them into large wedges, then into pieces about an inch thick.

    Transfer them to a bowl and season with extra virgin olive oil, Modenese aglione, and a pinch of salt. Mix thoroughly.

  • Place the potatoes in the air fryer basket with a parchment paper liner on the bottom. Although the fryer is non-stick, I always prefer to use the liner for easier cleaning after cooking.

  • Bake the potatoes at 400°F for 30 minutes. Turn them halfway through to ensure even cooking.
