I decided to keep the original name for Coffee and Cream French Toast because I believe it better conveys the idea of the delicious recipe I chose to prepare this month for “Il Club del 27”.
January has been the month of #Veganuary for years, and our Club also decided to contribute with a vegan recipe. Although I haven’t joined the movement, which has seen ever-increasing participation reaching 706,965 sign-ups in 2023, I enjoy cooking vegetarian or vegan dishes from time to time. I am a meat lover and have never hidden it on this blog, but I also love cooking vegetables and preparing recipes perfect for those who have decided to follow a vegetarian and vegan diet.
The recipe is taken from the book Easy Speedy Vegan by Katy Beskow, where the name says it all. It contains over 100 recipes divided into three sections. The ultra-quick recipes, to prepare in 10 minutes, the quick ones to prepare in 20 minutes, and the slightly less quick ones, which can be made in 30 minutes.

Ingredients for Coffee and Cream French Toast
- 7 oz almond milk (sweetened)
- 3/4 cup flour
- 4 slices white bread
- 1/4 cup sunflower oil
- 4 tsp granulated sugar (superfine)
- 4 tbsps ice cream (vegan vanilla)
- 2 tbsps maple syrup
- 1 tsp vanilla extract
- 1/2 cup coffee
- 1/2 tsp ground cinnamon
- 1/2 tsp unsweetened cocoa powder

- Non-stick Griddle
Preparation of Coffee and Cream French Toast
Prepare the batter. Pour the flour into a bowl and, using a whisk, add the coffee, almond milk, maple syrup, vanilla extract, and mix carefully to remove all lumps.
Pour the oil onto the non-stick griddle and heat it well. Alternatively, you can use a large non-stick pan.
Dip the bread slices into the batter, turning them well, then place them onto the hot griddle. Flip them after a couple of minutes to brown both sides. Place the bread slices on a plate lined with paper towels to remove excess oil.
Place the bread slices on serving plates.
Mix together the sugar, cinnamon, and cocoa, and sprinkle over the French toast. Add a scoop of vanilla ice cream and serve immediately.

Why was Veganuary 2023 a success?
706,965: that’s the number of official participants in Veganuary 2023, the challenge to switch to a plant-based diet for the month of January. But the record number of sign-ups globally in the initiative’s tenth year is likely just the tip of the iceberg: several studies have suggested that total participation in the vegan month is significantly greater than the number of people registering through official websites.
Certainly, a positive approach to veganism involves shifting the perspective from “what will I have to eliminate from my diet” to “what could I add to it,” thus turning January into an opportunity to discover new products.
Finally, the awareness of doing something good for our planet.
