Cornbread with Peaches

The cornbread with peaches is the second recipe from the book “The Official Netflix Cookbook” for this month’s CookBook Club.

I have already talked about this fun project in the previous recipe, the Coq au Vin, and you can read the reviews of the books we’ve covered so far and the recipes of other members on the Aifb website.

This is the classic cornbread prepared in the United States for Thanksgiving, but in general for all holidays and family gatherings. This recipe is dedicated to the TV series “Family Reunion” and appears in two episodes: the first episode of the first season, where Ami hides the cornbread pan under the table to prevent Uncle Daniel from taking it along with the other food, and the last episode of the fourth season, where the whole family gathers for the family reunion on the ancestral land returned after 100 years. Here they prepare a version with honey sauce.

Normally, cornbread is not sweet, but the author of the book took the liberty of transforming a traditional American dish, which is usually neutral, into a dessert. An homage to the juicy Georgia peaches where the TV series is set.

Ingredients for the Cornbread

  • 1 1/4 cups fine cornmeal
  • 1 cup all-purpose flour
  • 5.5 oz butter
  • 1 1/4 cups buttermilk
  • 1/3 cup acacia honey
  • 2 yellow peaches
  • 2 eggs (large)
  • 2 tsp baking powder
  • 1 pinch salt

Preparation of the Cornbread

  • Place 2.5 oz of butter in a bowl and let it soften. Melt the remaining butter in the microwave; it will take about 30 seconds.

    Dice the peaches; you can leave the skin if you like. Add a tablespoon of all-purpose flour taken from the total and mix well.

  • Pour the remaining all-purpose flour into a bowl, add the cornmeal, baking powder, the pinch of salt, and mix carefully. Break the eggs in a bowl and mix until the yolks are well combined with the whites. Add the buttermilk, 1/4 cup of honey, and the melted butter. Mix well.

    Pour the egg mixture into the flour and mix carefully.

    Add the peaches and mix.

  • Heat the cast iron skillet in the oven at 350°F for a few minutes, then take a bit of butter from the softened one and grease the skillet well, including the edges.

    Pour the cornbread batter and bake in the oven for 25-30 minutes. The bread should be slightly golden on the surface. Do the toothpick test; it should come out clean.

  • Let it cool slightly.

    Meanwhile, prepare the honey sauce. Mix the softened butter with the remaining honey, a pinch of salt, and a pinch of freshly ground pepper in a small bowl.

    Cut the cornbread into wedges and serve immediately with honey butter.
