Some time ago, for a vegetarian aperitif, I prepared these crispy chickpeas with the air fryer.
Some time ago I was telling a friend that I had to organize an aperitif for a vegetarian friend during the presentation of her new line of bags and she promptly suggested this snack.
And from there it was a short step. Indeed, they are prepared in no time and brilliantly replace the usual salted peanuts. I find that oven chickpeas are healthier and by preparing them at home we can dose the salt and spices to customize them.
I flavored them with rosemary because this herb goes very well with chickpeas, but there’s nothing stopping you from using any herb. Even with fresh thyme or oregano, the combination is perfect, it depends on your personal taste. Finally, if you use rice flour instead of wheat flour, the dish will also be perfect for our celiac friends.
The cooking of these chickpeas can be done traditionally in the oven or by using the air fryer. The result is the same but you will have used less oil and especially less time.

Ingredients for Crispy Chickpeas with Air Fryer
- 1 1/2 cups cooked, boiled chickpeas
- 2 tablespoons all-purpose flour (or rice flour)
- 1 tablespoon extra virgin olive oil
- 1 sprig rosemary
- to taste salt

Preparation of Crispy Chickpeas
Wash and dry the chickpeas. Remove the skin and place the chickpeas in a bowl; add the oil, flour, and rosemary sprig. Salt to taste and mix carefully.
Preheat the air fryer with the specific program, mine heats up to 401°F for 4 minutes.
Once the air fryer is ready, place the chickpeas in the drawer with the appropriate parchment paper on the bottom.
Cook the crispy chickpeas for 15 minutes at 356°F, making sure to stir them halfway through to achieve a more uniform browning.
Let them cool slightly before serving. Crispy chickpeas are delicious even at room temperature.
You can safely leave the skin on the chickpeas; it doesn’t always come off easily. I usually remove it, but in not all brands of cooked chickpeas is this immediate. Evaluate according to the product you purchase.
