The lamb chops with farro and strawberries are a very tasty and unusual main course.
It’s a very particular recipe from the book Pulp: A Practical Guide to Cooking With Fruit by Abra Berens and together with the girls from Il Club del 27 we tried to prepare as many recipes as possible. I invite you to check them out on the MTChallenge site.
I love lamb meat and had never tried it with strawberries, but this type of meat pairs well with fruit, as the book “The Flavor Thesaurus” discusses these combinations extensively. It is definitely a dish type far from our cuisine, but I must say that all the ingredients go perfectly together, making the dish balanced and very delicious.

Ingredients for Lamb Chops
- 2 lbs lamb chops
- 1 cup pearled farro
- 1 cup strawberries
- 1/4 cup red wine
- 1.75 oz chard (or spinach)
- to taste extra virgin olive oil
- to taste salt
Preparation of Lamb Chops
Cook the pearled farro in plenty of lightly salted water, it will take about 15 minutes. Drain it and dress it with a drizzle of extra virgin olive oil.
Quickly cook the chard and slice it into thin strips, I used spinach. Once ready, add them to the farro and mix carefully.
Season the lamb chops to taste with salt and pepper. Sauté them for a few minutes on each side, once cooked keep them warm.
Meanwhile, while the lamb is cooking, wash and cut the strawberries, I quartered them.
Pour the wine into the pan in which you cooked the lamb and let it reduce by half. Add the strawberries and let them cook for a couple of minutes.
Place the farro on individual plates, add the lamb chops and pour over them the strawberries and a bit of red wine sauce.
Serve immediately.
