This book contains over 80 no-bake dessert recipes, all very easy and designed for those who crave a sweet treat without having to turn on the oven. Among the many offerings in the book, I chose these bites for their simplicity and versatility. Just a few ingredients, they are prepared in no time and are perfect to accompany ice cream or to be served alone, maybe with good coffee or a cold herbal tea. I paired them with After Eight ice cream from my favorite gelateria, and I must say the combination of mint freshness and white chocolate sweetness was a delightful discovery. The contrast between the creaminess of the chocolate and the crispy lightness of the puffed rice makes these bites irresistible at first taste.
Another advantage of this recipe is it lends itself to endless variations: you can enrich them with chopped nuts, coconut flakes, or why not, a bit of orange zest for a citrus touch. Plus, it is one of those preparations perfect for making with children: just mix, create the bites, and let the fridge do the rest.

Ingredients for Puffed Rice Bites
- 3.5 oz white chocolate
- 1.4 oz puffed rice
- 1 tbsp water
- 1 tbsp acacia honey
- 2.5 cups ice cream (mint and chocolate)

Preparation of Puffed Rice Bites
Place the white chocolate, water, and honey in a bowl.
Melt the chocolate in the microwave, which will take about 40-50 seconds at maximum power. Be careful as white chocolate tends to burn quickly. Once melted, carefully stir the chocolate.
Pour the melted chocolate over the puffed rice and mix carefully and quickly.
Spread the mixture onto a tray lined with parchment paper or plastic wrap and let it set.
Cut out circles with the cookie cutter, or you can simply break the puffed rice slab into pieces.
The book’s recipe suggests serving the puffed rice and white chocolate bites with fresh whipped cream and strawberries, but I thought of using these delicious bites with some wonderful mint and chocolate ice cream.
Place the ice cream in individual bowls, add some bites, and serve immediately.
